CHAMPAGNE & SPARKLING WINE Piper-Heidseick | France (1/2 bottle) | 30 Wine Description: On the eye
 A clear, golden Champagne robe par excellence. Delicate and fine bubbles resulting from an extended maturation time. On the nose
 Fresh fruit dominates, with pear and russet apple, and a few hints of citrus fruits such as star fruit. The finish evokes fresh grapes, livened with hints of freshness and aniseed. On the palate
 A structured, full-bodied and franc wine. A juicy, fleshy pear and golden grape texture. The finish narrows to citrus and grapefruit flavours. A wine with great fruit, a good mouthfeel and a harmonious balance. Menu Pairing Suggestions: It is traditionally said (particularly by champagne producers!) that champagne can be paired with any food! That might be a slight exaggeration, but it is amazingly flexible. It pairs well with more delicate dishes such as our Salmon Tartare, but it dryness and effervescence works well with a richer choice such as our Patés. Wonderful with our Oysters, probably not as good with our Steaks. PIPER-HEIDSIECK Cuvée Brut is a classic, structured, full-bodied and bursting with fruit Champagne. The blend is composed of a majority of Pinots Noirs, incorporating more than 100 crus from around the Champagne region and Pinots Meuniers from the Grande et Petite Montagne de Reims region.

Gruet Blanc de Noir | New Mexico | 40 90 Points and Top 100 American Wines as selected by Wine Spectator. Blanc de Noir The rich and toasty character of our Blanc de Noirs is balanced and superb. Aged for twoyear minimum, the palate is developed and shows rich complex flavors. The amazing berries aromas and the creamy texture play a leading role and create a great finesse. Winemaker's Note: A fine salmon color, aggressive mousse and a lovely fruity wine with plenty of immediate charm and toasty aromas. Wonderful with our Oysters, probably not as good with our Steaks History Gilbert Gruet founder of Gruet Winery was born in Bethon, France in 1931. He grew up in a poor family, and began working at a young age. In 1952, Gilbert Gruet, along with his wife Danielle, dreamt of producing fine quality Champagne. In 1983, the Gruet family was traveling through the Southwestern part of the United States, and while in New Mexico met a group of European winemakers who had successfully planted vineyards In Engle, near the town of Truth or Consequence, 170 miles south of Albuquerque. The land was inexpensive and the opportunity golden. In 1984, Gilbert Gruet, whose Champagne house, Gruet et Fils had produced fine Champagne in Bethon, France, since 1952, made the decision to plant an experimental vineyard, exclusively planted to Pinot Noir and Chardonnay grapes. In 2012 Gruet sold 125,000 cases of wine and distributed them to 48 states. . 6

Laluca Prosecco | France | 32 Wine Description: The wine pours an almost translucent bright yellow, with hints of green reflecting off the glass. The nose is instantly defined and distinctive, offering up bold orchard fruits, crisp pears, and lemon curd, all of which come together in a rich, creamy off-dry style that is extremely appealing. There is a deft touch of minerality, playing nicely against the subtle sweetness of the wine. The finish shows excellent length and fine overall balance. Vinified entirely in stainless steel employing the Charmat method, native, indigenous yeasts are utilized when possible. The finish shows excellent length and fine overall balance. Serve chilled as an aperitif. Menu Pairing Suggestions: This is a lovely Prosecco and a lot of what is said about Champagne’s flexibility with food is true of this Prosecco. Try it as an aperitif before dinner and after a few sips take a look at our menu and pick almost anything you think would work. Chances are you will be right. Muga Cava Conde de Haro | Rioja Spain | 40 (Temporarily Out of Stock) Wine Description: The first impression in the glass is of bright yellow-green hues. The foam is dense and persistent, providing an inkling of its structure in the mouth. Looking at the center of the glass we can see a uniform line of microscopic bubbles rising to the surface.The nose is dominated by tangy fruit and floral aromas.. Honeyed yet fresh in the mouth, thanks to its significant acidity. The combination of fruit, acidity and fine lees results in a surprising sensation of fullness that invites one to continue tasting it. The fruity notes return in the aftertaste, with predominant spices that, for several seconds, leave a very pleasant memory. Menu Pairing Suggestions: It is traditionally said (particularly by champagne producers!) that champagne can be paired with any food! That might be a slight exaggeration, but it is amazingly flexible. The same is true of top quality Cavas. They pair well with more delicate dishes such as our Salmon Tartare, but their dryness and effervescence work well with a richer choice such as our Patés. Wonderful with our Oysters, probably not as good with our Steaks Vineyards The vineyards are located at a high altitude in the same areas the Prado Enea vineyards. However, the cava vineyards are located on slopes facing north, to protect the plants in the summer from excessive heat that could alter the delicate varietal aromas required by cavas. Pressing is the most delicate moment, as the quality must be maintained at all costs. Only the must drawn from the lightest pressing is used to make this cava. The grape varieties used are Viura (90%) an indigenous Spanish grape and Malvasía (10%). 8

WHITE STILL WINES CHARDONNAY Paul Hobbs Crossbarn, Sonoma, California | 58 90 points Robert Parker's Wine Advocate There are over 8,000 cases of the outstanding 2012 Chardonnay Cross Barn, which offers plenty of orange marmalade, lemon oil and white peach aromas. This steelfermented, primarily stainless steel-aged Chardonnay (12-15% oak was employed) went through 100% malolactic fermentation. Crisp, fresh and steely, it comes across like a California version of a French Chablis with a richer, more tropical personality. It is a big-time winner as well as a great value. Enjoy it over the next 3-4 years. (12/ 2013) Wine Enthusiast This seems almost sweet in vanilla, honey and buttered toast, with ripe pineapple, orange and tropical fruit flavors. A great burst of acidity provides balance. Drink now for its sheer lusciousness. 2012 Christian Moreau, Chablis, Chablis, France | 48 Wine Description: The 2012 Chablis is a ripe, yet bone dry Chardonnay with crisp green apple, mineral and a touch of saline. Note: Not everyone is aware that all Chablis is 100% Chardonnay grape from Burgundy. The Chablis AOC is one of the oldest and they are wonderful food wines. With a crispness that pairs very well with a variety of dishes. Try a bottle you will enjoy! Menu Pairing Suggestions: Chablis and Oysters – No questions here! But, also pairs very well with Salmon Tartare, Crab Cakes, Escargot, Quiche, Hand Cut Tuna Burger, Roast Chicken and Mussels and most Pastas and Risotto Summary: The versatile, village Chablis from Domaine Christian Moreau Pere et Fils is bright and crisp, with the classic, taut structure and refreshing minerality that define traditional Chablis. This is a Moreau classic! 

 Vinification: The winemaking techniques strive to honor the high quality of the terroir, vines and grapes, bringing out the very best in every harvest. 2011 Bourgogne Blanc, Oliver Leflaive, ‘Les Setilles’ Burgundy, France | 47 Wine Description: 100% Chardonnay, with beautiful balance between fruit and acidity as only the great Burgundy producers can do, to make the perfect food wine. Menu Pairing Suggestions: This is a classic White French Burgundy made by one of the oldest negotiants in Burgundy. It is made for our menu! Pair it with our Paté, Escargot, Crab Cakes, most Salads, Oysters, Salmon Tartare, Roast Chicken, Mussels, Hand Cut Tuna Burger or most of our Pasta and Risotto Summary: Olivier Leflaive Bourgogne Blanc Les Setilles (family garden) has become one of the most popular wines of Oliver Lefaiaive! Year in/ year out this wine represents impeccable quality and unsurpassed value in the French wine category. This wine exceeds expectations of even the most discriminating of palates. 
 
 Terroir: Les Setilles is sourced from vineyards within the communes of Puligny Montrachet and Meursault, with each village representing roughly half of the final blend. Grapes are sourced from multiple plots within each village in an effort to maximize complexity of the final wine. 
 Vinification: Vintage consistency is the goal with this wine so the blending of lots and aging technique will vary according. Roughly 60% of the wine is aged in Allier oak, only 10% of which is new. 2010 Eikendal , Stellenbosch, South Africa | 42 Wine Description: The wine is packed with freshness and hints of minerality, followed by fresh, ripe pears, honey suckle, orange peel, apples and honey. The palate is linear and features a tight minerality, with a creamy, fruity finish of great length. The aim during picking and vinification was to create a wine of freshness and elegance, without any overripe or overbearing flavors. The oak is well integrated and provides the perfect structure for the fruit components of the wine. Menu Pairing Suggestions: This wine was a hit of one of our Wine Dinners featuring wines from South Africa. And, for good reason! It is a wine with wonderful freshness and is clean and beautifully balanced. Enjoy this wine with our delicious Prince Edward Island Mussels, our Pastas and Risotto, Roast Chicken, Chef’s New Orleans Style Crab Cakes, Oysters, Salmon Tartare, Hand Cut Tuna Burger, Quiches and our Flatbreads. Vinification: The grapes were hand picked in three stages. The lot that was picked first, serves to provide us with freshness and acidity, while the riper lots lend fresh citrus fruit, structure and creaminess to the wine. The grapes are cooled down for one day before whole bunch pressing. After fermentation, the wine was aged for eight months in 30% new, small French oak barrels from the TDM cooperage, with the balance second and third fill. The barrel ageing process happened with minimum intervention and batonage, so as not to overshadow the delicate characteristics of the wine. Alcohol: 13.5 vol.%

2011 Chartron et Trébuchet Bourgogne, Burgundy, France | 35 Rated 90 by International Wine Report: 
 “Light golden color. The bouquet offers up aromas of apple, straw, wet rocks, smoke and white flowers. It has good acidity with a relatively sophisticated mouth feel. It is all wrapped in a balanced finish. This will make a great house white and also improve with age.” (Best 2014-2020) - February, 2014 Wine Description: Light golden in color, with green highlights, the wine is richly aromatic, exuding aromas of dried fruits and white flowers. The stainless steel tanks bring fruit flavors and freshness whereas the oak barrels used for aging bring structure and roundness. Bourgogne Chardonnay is perfect with appetizers, white meats, seafood, grilled fish and goat cheese. It is best served chilled (50/54°F). Menu Pairing Suggestions: Another classic Burgundian Chardonnay. That goes wonderfully with any of our Seafood dishes, Roast Chicken, Escargot, Quiches, Pasta and Risotto. Try it with our Cheese Plate. We too often only think Red (or, if course a Port) with cheese. Too limiting, we think you will like this combination! Notes: An excellent value intro to Burgundy, this wine is made from 100% Chardonnay grapes selected from 25 year-old vines in the Côte de Beaune, Côte Chalonnaise and Mâconnais regions of Burgundy. It all began in 1984… when Louis Trébuchet met Jean-René Chartron, a winegrower based in the village of Puligny-Montrachet. Louis was a young Burgundian who was eager to set up his own company in order to use the experience gained as manager of a reputed wine firm in Beaune. Providence enabled the two to meet and discover their mutual passion for Burgundy and its wines. The company is now owned and run by Vincent Sauvestre, 4th generation winegrower in Meursault with vines in the Côte de Nuits and Côte de Beaune including three Grand Crus and twelve Premier Cru wines. 13

2013 JT Cellars, Sonoma County, California, California | 32 Wine Description: Our Chardonnay touches the palate with complex fruit aromas of ripe apple, pineapple and notes of pear and melon with a warm buttery finish of Hungarian oak and hints of vanilla. The mouthfeel is bold, smooth, yet racy with balanced acidity and tannin – a great food wine. Our Chardonnay pairs well with seafood, chicken and Mediterranean salads. Enjoy now, or cellar for up to five years. We hope you enjoy this luscious Chardonnay as much as we enjoyed making it! Menu Pairing Suggestions: The JT Chardonnay is an excellent example of a well made, reasonably priced California-style chard. A little buttery but with sufficient acidity to make it interesting and balanced. As with good food you must start with good ingredients and JT sources first rate grapes for all their wines. This a great aperitif wine before dinner and works well with our Quiche, Roast Chicken, Crab Cakes and Seafood dishes. OTHER WHITE VARIETELS 2011 Villa Castello Pinot Grigio, Italy | 29 Wine Description: Light with a crispness that is found in good Pinot Grigios. The fruit is there but balanced nicely. A good food wine with lighter dishes and excellent as a before dinner aperitif. Menu Pairing Suggestions: Excellent with our Prince Edward Island Mussels in any of the broth choices, our Oysters, Salmon Tartare, our lighter seafood preparations, including our Crab Cakes and the Hand Cut Tuna Burger

2009 Hugel, Pinot Blanc ‘Cuvee Les Amours’, Alsace, France | 36 Wine Description - Delicate, subtle and well built, it makes an excellent apéritif because, although nicely rounded, it is also refreshing.The perfect all-purpose dry white wine Menu Pairing Suggestions Pinot Blanc is a grape you should get to know. Particularly one made by the Hugel family from Alsace. This wine works beautifully with our Lobster Roll during the Summer months and with our Pan Roasted Salmon and Skate. It also pairs very well with the Salmon Tartare and our Quiches and Flatbreads Winery Description For over 370 years and with 13-family generations the Hugel family has unrivalled experience and knowledge of Alsace vineyards and winemaking. Without the work of the remarkable Hugel family, located in the picture-postcard fortified village of Riquewihr, the worldwide reputation of Alsace wine would not be the same. Over half Hugel’s 30-hectares are in Grand Cru vineyards. Winemaking is transparent, so that fruit, soil and vintage are clearly conveyed in the glass. Handpicked grapes come to the winery in small tubs, are rigorously sorted then gravity-fed into the presses without pumping. After gentle pressing the must is decanted before a long, slow fermentation in temperature-controlled barrels or vats. The wine is racked once, before slow natural clarification over the winter. “Hugel” wines are the quintessence of Alsace.

2012 Xavier Frissant “Sancerre”, Loire Valley, France | 36 Wine Description: A pale shimmer in appearance, the wine reveals an expressive nose of lychee and linden flower. Fresh and mineral in the mouth, with lively aromas of citrus and exotic fruit notes. To be enjoyed in the garden, sheltered from the sun! Menu Pairing Suggestions: This Sauvignon Blanc is not actually a legal Sancerre. Thus the quotes! But, it is from the region right next door and is very much a Sancerre in style and mouthfeel at a more reasonable price. Great with all our seafood dishes including our Oysters and Salmon Tartare, Lobster - when on the menu and many of our Pastas and Risotto. Winery Notes: 100% Sauvignon Blanc This Sauvignon de Touraine comes from a parcel of vines located at the extreme south of the vineyards on the lieu-dit “Les Pentes.” 100% Sauvignon Blanc vines are planted on a stony hillside, in clay, silica and sandy soils. This hillside micro-climate and soils with a high proportion of stones has a great influence on the wine, evident in the striking minerality at first sip. At harvest, the grapes are de-stemmed then pneumatically pressed. Low temperatures are key for the winemaking, after which the wine is aged on fine lees in stainless steel tanks until bottling in March.

2012 Cross River Sauvignon Blanc, Marlborough, New Zealand | 34 Wine Description: An attractive, soft and round style of Marlborough Sauvignon Blanc. Light with pale green glints. Dry, with a balanced fresh citrus flavor and an attractive mineral finish. Refreshing, clean, flavorful and lively. Pale yellow color, on the nose - Nettles, snow pea, flint, wet stone and guava. On the palate -
 Citrus approach, grapefruit, mineral mid palate, long finish with good weight and texture. Menu Pairing Suggestions: Food pairing with New Zealand Sauvignon Blanc is more challenging than with the great majority of white from France, Italy or the U.S. They are much more aromatic and need to be matched with more assertive dishes. This wine would go well with our Escargot, in the summer with our Farm Tomato and Burrata Salad, and with our Bistro Frisée and BLT Salads. It could also be enjoyed with our Hand Cut Tuna Burger, and our Mussels in Saffron Broth and our Skate with Citrus Segments and our Lobster Risotto. Notes: Marlborough's Awatere Valley grows fruit that shows depth and complexity with flinty mineral notes. This is an attractive, soft and round style of Marlborough Sauvignon Blanc.

2013 Muga Rioja Blanco, Haro, Rioja, Spain | 38 Wine Description: The nose is fresh and ripe at the same time. It brings together honey, citrus fruit and an elegant touch of pineapple. As “curtain-raisers” we have the ever-present fine lees and hints of pastry shop aromas. Very much in the background, almost imperceptible at this point, the fine oak spiciness begins to come through. The attack is surprisingly dominant compared to what we expect in this wine. The acidity is perfectly integrated into the wine without overpowering it. It is a wine which initially tastes the way it smells but changes its profile in the aftertaste. Menu Pairing Suggestions: Most of us are not familiar with the Viura grape. It is indigenous to the Rioja area of Spain an area more known for the big reds. This is big white and a wonderful food wine. It goes beautifully with our Roast Chicken, our Pastas and Risotto, with the Pork dishes we often have, and with our Mussels, and Hand Cut Tuna Burger Vintage Notes: We came out of a hot, dry vintage in which the viura variety suffered more than usual and were plunged into one at the complete opposite extreme. A cold and abnormally damp year allowed the vine to feel at home throughout the growing cycle and there was no need to restrain its canopy development for the benefit of that of the fruit. It is well-known that viura has always tended to be planted in extremely poor, dry soils which, in this harvest, has worked in their favor, allowing them to achieve the right point of ripeness.

2012 Lusco Zios Albarino, Rias Baixas, Spain | 36 Wine Description: Zios, or “twilight,” is produced from 4 hectares of vineyards. Intense, yet clean fragrances of tropical white fruit fill the nose. Refreshing on the palate with crisp grassy notes, Zios is a well-balanced wine with a rounded mouthfeel and lingering finish marked by a slight, pleasant bitterness Menu Pairing Suggestions: Albarinos are great food wines! There is a fullness to the Lusco Zios that goes so well with our menu. (That is reason it is on our list!) Try it with our Roast Chicken, Pastas, Risotto, our Lobster Roll when it is in season, any Pork dish we have and it is perfect wine for our Cheese Plate or Paté. Also great with our Prince Edward Island Mussels Vintage Notes: Three months off lees aging is followed by 2 months of bottle aging. Aged on the lees for three months in stainless steel then cellared for 2 months in bottle prior to release, this fresh, young wine can be enjoyed as an aperitif, yet pairs nicely with raw seafood and shellfish. Best within a couple of years of the vintage.

2013 Nicolas Sauvignon Blanc, Cotes de Gascogne, France | 34 Wine Description: The 2011 Nicolas Sauvignon Blanc, produced in the Cotes de Gascogne, southeast of Bordeaux France, is a classic Sauvignon Blanc. Wonderfully balanced and smooth, with crisp acidity and ripe peach, pear and apple flavors. Beautifully floral on the nose, crisp and refreshing on the palate, and a pleasing dry mineral finish, make this wine truly delightful. Menu Pairing Suggestions: The French Sauvignon Blancs are much easier to pair with food than the New Zealand’s! There is some very nice fruit present in this wine but the aromas are much more subdued. Slightly more acidic than your typical Chardonnay, but nicely balanced in this wine. Try it with our Onion Soup, Escargot, Crab Cakes, Risotto or Pasta, Roast Chicken, Tuna Burger and Mussels Wine Notes: Sauvignon Blanc is a white-wine grape from western France, now successfully grown in emerging and established wine regions all over the world. While the grape may be more readily associated with the Loire Valley (for its pivotal role in Sancerre and Pouilly-Fume), it is more likely to have originated from Bordeaux, where it is typically blended with Semillon. The key selling point of Sauvignon Blanc is its straightforwardness – the flavors are rarely hidden away in the background. Also, there is a particularly close correlation between the perceived flavors and their descriptors, making Sauvignon Blanc an ideal wine with which to begin wine-tasting lessons.

RED CABERNET SAUVIGNON AND CAB BLENDS 2008 Hendry, Napa Valley, California | 80 90 | 2008 Hendry Vineyard Napa Valley RED - It’s clear that there’s something underneath the rich oak, but you have to give the wine plenty of air to find it. A day after it’s opened, there’s a beautiful scent of cherries and chocolate, the wood present but now just one element in the mix. Cherry skin tannins keep it dry, setting the wine on a claret’s path toward roast game birds like squab.

Put simply, it’s an unconventional, un-shy blend of the five classic Bordeaux varieties: Petit Verdot, Malbec, Cabernet Franc, Merlot and Cabernet Sauvignon. Unconventional because the grapes which are typically used in small quantities in traditional blends (Petit Verdot,Malbec), but which are full of deep flavor, color and interest, are in the majority, making for a rich, full and complex wine with plenty of serious tannin backbone. Then George Hendry adjusts the blend and tinkers with the balance until it suits his vision of the very best wine he can make from the vintage. It’s important to George to make a wine that is very different from Cabernet Sauvignon in flavor and overall character, but with enough tannin, intensity and complexity to age well and continue to evolve beyond the simple primary fruit flavors that make it so initially appealing. Suggested Menu Pairings: This is a big red wine. We suggest we decant it for you and allow it a few minutes to breathe. Then have with one of our Steaks, perfect with Long Island Duck Breast, great with any of our Burgers. It would work well with one of our heartier Fall or Winter Risottos or Pasta. 2009 La Fleur Plaisance Grand Cru Bordeaux, Saint’-Emilion, France | 40 Wine Description: A deep garnet color, a luscious, up-front ripe bouquet (violet with red berry notes, plums and other dark fruit) and an irresistible, hefty, sweet, smooth, almost silky and velvety taste with depth and certain finesse, it has a quite complex, medium-dry aftertaste that lingers for several minutes in the mouth. Menu Pairing Suggestions: Due to the prominence of Merlot this is a smoother, softer wine than those were Cabernet dominate. Great with Cheese, our Onion Soup, our House Made Paté, Roast Chicken, any of our Steaks and Burgers and our Risotto and Pastas Notes on the Region: Unlike the wines of the Medoc (which focus heavily on Cabernet Sauvignon), Saint-Emilion wines are predominantly made from Merlot and Cabernet Franc. The other traditional Bordeaux varieties (Cabernet Sauvignon, Carmenere, Petit Verdot and Malbec) are permitted for use here, but are rarely used to any significant extent. This is not so much a question of taste and style as one of terroir; the clay- and chalk-rich soils around Saint-Emilion are generally cooler than those on the Medoc peninsula, so they're less capable of ripening Cabernet Sauvignon reliably. 2011 Chateau Smith, Columbia Valley, Washington | 40 Wine Description — Columbia Valley 80% Cabernet Sauvignon, 14% Petit Verdot, 3% Malbec, 3% Merlot Classy and refined, it's just damn amazing. Cassis, pencil lead, fresh herb and crushed granite. It is satin smooth and elegant, further defined with a super long finish. Menu Pairing Suggestions: Washington State makes some great wine and is usually a bit less expensive than Napa. The Charles Smith is a perfect example of great Cab Blend at a very reasonable price. Try it with our Onion Soup, our House Made Paté, any of our Steaks, our LI Roast Duck, any of the Burgers and our heartier preparations of our Risottos and Pasta. Notes: in 2006 Charles started a second brand, Charles Smith Wines. The brand was themed as “The Modernist Project,” which focuses on the way people generally consume wine today: immediately. The intent was (and still is) to create wines to be enjoyed now, but with true typicity of both the varietal and the vineyard. A self-taught winemaker, Charles is a true artisan and a pioneer in the wine world. 2009 Tertulia Cellars “Sobra”, Columbia Valley, Washington | 38 Wine Description: Sobra does not hold back! Our vote for one of the most enjoyable Washington State reds in recent memory! Deep, dark and opulent are the best words to describe 2008 Sobra. This is easily the finest bottle of Sobra we have put together. The first whiff off the nose is of roasting meats followed closely by sweet wild cherry. As the wine opens the aromatics evolve into pine needles, vanilla, crème brulée and finishing with stewed plumbs. On the palate this full bodied wine fills the mouth with richness that transforms into lingering tannins. 2011 Thomas Henry Cabernet Sauvignon Sonoma, California | 35 Wine Description: Ripe, dark fruit flavor, blackberry cassis and dry cherry aromatics with hints of plum and spice on the nose as well. Firm yet integrated tannins intertwine with the dark fruit flavors providing a long finish with just a touch of chocolate. Menu Pairing Suggestions: This is another wine that emanated from a Bistro Rollin Wine Dinner. Tom Meadowcroft, owner and winemaker was our host and he makes some great wines. This is lovely cab those goes very well with our menu. PINOT NOIR 2012 Bergstrom Cumberland Reserve, Willamette Valley, Oregon | 78 Wine Description: Following up such successful vintages as the 2010, which garnered 90 points Wine Enthusiast, and the praise: "Bergström’s lineup of Pinot Noir begins where many other wineries finish...A fine example of this winery’s house style." This is the introductory wine to a solid portfolio of well-made Pinot Noir from excellent vineyards. From the winery: "This blend of our five estatefarmed vineyards showcases Oregon’s cool climate at its best, showcasing the telltale spiciness, earth and mineral characteristics and fresh fruit of Oregon Pinot Noir, as well as the Bergström style of concentration balanced with age-worthy tannic structure. The 2012 Bergström Wines Cumberland Reserve is black raspberry in color with a great aromatic triumvirate or earth, spice and fresh fruit. The full-bodied flavors are also highly aromatic with sweet purple violets, Oregon matsutake mushrooms, black cherries, licorice and cinnamon spice. 2012 Domaine Faiveley Mercurey, Burgundy, France | 50 Wine Description: A beautiful dark ruby color. The nose opens up with notes of fresh red fruits and spices. Pleasant to taste, this wine has a round and fruity attack before revealing its fine and silky tannins.
 This well-balanced wine with long-lasting aromas will be appreciated by knowledgeable wine lovers and will seduce novices too…. Menu Pairing Suggestions: This wine is a great contrast to the previous wine on our list (Bergstrom). Almost delicate by comparison. Everything is lighter, more subdued and subtle. Very French! This wine will go wonderfully with our Roast Chicken, many of our Seafood Dishes, with all of our House made Soups, with our lighter Risottos and Pastas, with all of our Salads, and our Flatbreads Notes: Under the helm of Erwan Faiveley and Bernard Hervet since 2005, Domaine Faiveley is on a tear. With its winemaking duo of technical director Jêrome Flous in the Côte d'Or and manager Julien Bordet in Côte Chalonnaise, Faiveley has made some of the best young wines I have tasted from the 2010, 2011 and 2012 harvests. Gone is the austerity and firm, even severe tannins that demanded long aging, replaced with greater purity, focused fruit and supple tannins. It remains to be seen how these wines will age over the long term, but they are so delicious young, will Burgundy lovers lock some bottles away in the cellar?

2011 Heron, Sonoma, California | 38 Wine Description: An elegant ruby red, this Pinot has clean aromas of Pinot fruit, dark cherry and blueberry… nicely surrounded with tartness and structure. This is a balanced food or sipping Pinot, with some Old World Burgundy class in it.” Menu Pairing Suggestions: Interestingly, this Pinot falls nicely between the two previous wines on our list (Bergtrom and Faiveley Mercury). Made in the Burgundian style but in Northern California, it shows characteristics of both. It has enough body to go with any of our heartier dishes but does not require them! Menu Pairing Suggestions: This a moderately priced Pinot that has been made with great care and skill from excellent fruit. This can be thoroughly enjoyed before dinner and with many dishes on our menu. It works wonderfully with our Paté, our Flatbreads, our Onion Soup and many of our Salads. SYRAH/GRENACHE 2011 Chateauneuf-du-Pape Adissat Isabelle, Rhône, France | 62 Wine Description: The critically-acclaimed Adissat Cuvée Isabelle 2011 (91pts Parker/90-92 Tanzer) is a showcase of Chateauneuf-du-Pape’s strengths and a testament to its legacy. GRENACHE dominates the blend at 70%, coming from four different terroirs, each contributing uniquely. Along with the elegance and harmony of the sandy North, floral and fresh, and the warm spice of the pebbly South, comes a cascade of minerality courtesy of 50 year-old vines in limestone soils and the structure and backbone from the famous La Crau vines Menu Pairing Suggestions: Notes: In addition to the predominant GRENACHE there is 20 year-old SYRAH vines from three top Chateauneuf-du-Pape terroirs contribute finesse and garrigue aromas (sandy with northern exposure) and a heated strength with austere notes of wild herbs. Focused, bright berry fruit dominates on the palate combining with spice and liquorice on the powerful finish. The Jaboulet Beaumes de Venise is a blend of old vine Grenache (85%) and Syrah (15%). The wine undergoes a long, cool maceration designed to extract color and flavor and is then aged entirely in stainless steel for 9 months. Menu Pairing Suggestions: This is one of the first wines we put on our bottle list when we opened over 5 years ago, and it is still one of our favorites. It is what we like best about Rhone wines – wonderful with food, big upfront flavors and with the great producers like Jaboulet excellent balance and individual style. Try with our Cheese Plate - the forward fruit in this wine makes a wonderful cheese pairing. Also with our Burgers, Steaks, Paté, Onion Soup, Escargot, and Roast Chicken and Duck. Also any Lamb dish we may have on the menu is made for this wine! When our Signature Cassoulet is on, don’t miss pairing that with this wine. 2010 Côtes-du-Rhone, Adissat (55% Grenache, 40% Mourvedre, 5% Syrah), Rhone, France | 38 Wine Description: A dense, dark, midnight blue in appearance, this wine reveals a deep nose of seductive black raspberry, along with cassis and herbal notes of lavender. With a sumptuous feel in the mouth, this is one serious wine, vibrantly rich and boasting a masterful concentration. Thick and juicy in its structure, this is a classic Provençal wine. It is a blend of Grenache (from 70 year-old vines). Mourvèdre and Syrah (both from 25 year-old

Menu Pairing Suggestions: By the same producer as our Chateauneuf-de-Pape this is a terrific reflection of Southern Rhone wines at a much more modest price. It can be paired with any of our bigger dishes. It would be perfect with the Roast Chicken with Ratatouille, or our NY Strip Steak with either the Peppercorn or Bearnaise Sauce, the Roast Duck Breast, our Bistro Rollin Burger with it’s Gruyere Cheese, Pancetta and Onion Confit, or our House Made Paté Notes: The Grenache of these galets roulés soils is very structured, spicy and masculine in nature, bringing backbone to the wine. A good dose of Mourvèdre is blended in to add freshness and minerality, a harmonious tension in the final wine, and completed by a touch of Syrah for extra spice and warmth. Organically cared for, their roots seek out minerals deep in the sandy clay soils the stones made famous by Châteauneuf-du-Pape, these grapes embody the magnificent 2010 Southern Rhone vintage.

2012 Charisma, Eikendal (78% Shiraz, 17% Petit Verdot, 5% Sangiovese), Stellenbosch, South Africa | 42 (Temporarily Out of Stock) Wine Description: Rhône meets Spain meets Italy! New world, fruit driven, upfront style. Intense fruit on nose which follows through to the pallet. Silky tannins with a hint of sweetness ensure a smooth wine with delicious juicy fruit. Exuding classic violets and spice nuances, the Shiraz lends a clean, fresh structure to the wine, whilst the Petit Verdot adds black fruit, spice and spunk to the blend, and the Sangiovese the final, refined touches with its clean fruit and smack of tomato paste. A different blend that makes sense once it is in your glass. Menu Pairing Suggestions: Another product of one of our Wine Dinners. These dinners which we try to hold about every six weeks are a great way for us to sample excellent wines paired with out style of food. 2012 Monga Zin Old Vine Zinfandel, Lopez Vineyard, Cucamonga Valley, CA | 38 (Temporarily out of Stock) Wine Description: This bold 100% Zinfandel offers up a lush, juicy and rich wine. It over delivers without being overdone. The ruby hue will catch your gaze, followed by intense aromas of ripe red cherry, red plum, raspberry, black currant and a hint of brown spice. Its full body texture and polished tannins tantalize your palate with brilliant cherry and raspberry on a bed of allspice, cinnamon, sage and nutmeg. Menu Pairing Suggestions: Notes: The “Monga” in this Zinfandel’s name refers both to its source, southern California’s Cucamonga Valley, and to the wine’s humongous mouthful of bright fruit and spice flavors. Zin-meister Carol Shelton has made this single-vineyard cuvée for more than a decade. It comes from a plot of gnarled, ancient vines at the base of the San Gabriel mountains, east of Los Angeles. 2010 Muga Rioja Reserva, Haro, Rioja, Spain | 54 Wine Description:Now that a year has passed since it was bottled, time is confirming that this was one of the best, if not the best, harvests of the decade. In appearance it has shades of dark, very bright, cherry with slight purplish glints as the eye moves towards the rim of the glass. This is enough information for us to prepare ourselves to taste a wine with a certain amount of structure. Before swirling the glass we can detect clearly-defined, very dominant red and black fruit (blackberry, redcurrant, wild plum). Then move the glass and fine leather aromas mingling with the fruit begin to appear. In the background, and only as a complement, select oaky spiciness comes through, still distinguishable but closely integrated into the wine. In order of predominance you can find black pepper, caramel, toast, vanilla, cloves ... 70% Tempranillo, 20% Garnacha, 7% Mazuelo and 3% Graciano. Menu Pairing Suggestions: Another great Rioja! Quite a bit younger but still ready to drink and enjoy. Again this wine goes wonderfully with all our more robust dishes.

2010 Chateau Saint Sulpice | (70% Merlot), Bordeaux, France | 40 Wine Description: Chateau Saint Sulpice, Bordeaux Rouge, is from a 100 acre estate situated in a village of the same name in the northern section of EntreDeux-Mers, just south of St. Emilion. The vineyard is planted with 70% Merlot and 20% Cabernet Sauvignon and 10% Cabernet Franc, and it enjoys a microclimate with an extra measure of warmth in early autumn. The winemaking takes pride in producing a soft, fruity wine with a spicy aroma typical of the Merlot dominated reds of the "right bank". Color

2012 Domaine Bousquet,Malbec*, Tupangato Valley - Mendoza, Argentina | 38 * Certified Organic Wine Description: Gold Medal for Domaine Bousquet Reserve Malbec 2012Decanter World Wine Awards 2013. It is a wine of dark violet color with reddish tones. In the nose it presents intense aromas of blackberry with notes of red and black currants, and plum. The mouth highlights notes of ripe plums with soft and elegant tannins. It has an excellent structure, long and persistent finßish. Made from organic grapes sourced mainly from vineyards in Tupungato at an altitude of 1200 meters (4000 feet) above sea level, one of the highest points in Mendoza. It is 100% Malbec, and has been in contact with American and French oak during the fermentation and then aged for 4 months in the bottle. Menu Pairing Suggestions: Malbec makes a very food-friendly pairing partner with its concentrated black cherry and blackberry fruit components. It can be paired with a stunning array of food types. Try it with our Mussels Provençal or Saffron Broth, our Escargot in Butter, Garlic and Parsley, New York Strip with Peppercorn Sauce, our Bistro Rollin Burger with Gruyère, Pancetta, and Onion Confit. ROSÉ 2013 Anthony Road, Finger Lakes, New York | 34 Wine Description: This wine is made of selected Cabernet Franc grapes, allowed skin contact for a portion of the fermentation, but not for the complete fermentation as is the case with our other red wines (thus it is "pink" in color but not sweet) Menu Pairing Suggestions: This is a lovely Rosé from a highly respected Finger Lakes winemaker using the Cabernet Franc grape that does very well in that rather cold region. It is dry and crisp but with a nice bit of fruit and a lovely light pink color. Perfect for Summer drinking. It goes very well with our Salmon Tartare, our Oysters, our Hand Cut Tuna Burger, Our PEI Mussels in any of the three broths, our Tomato and Buratta Salad, our Frisée Salad and many of our Seafood Specials Notes: Ann and John Martini, with the help of friends and family, planted the first grapes, all hybrid varieties, in 1973. Since that time they have replaced all the hybrid varietals, except the Vignoles, and have replanted vinifera varietals. On the Martini Vineyards acreage there are approximately 45 acres planted to grapes. These include; pinot noir, pinot gris, chardonnay, riesling, vignoles, cabernet franc, and lemberger. If you travel south about 1 mile you come to the Young Vineyards that we manage, close to another 45 acres. On this farm there is gewurztraminer, merlot, riesling, pinot gris, cabernet franc and lemberger.

2013 Muga Barrel Fermented Rosado, Haro, Rioja, Spain | 36 Wine Description: Fresh, clean and aromatic pink with lots of charm from this brilliant Rioja producer. This mouthwatering rosado, harvested from specific plots best suited to rosé wine, is a blend of grenache, viura and tempranillo, fermented in small wooden vats to impart a delicious lick of vanilla over the tongue-tingling red-fruit flavors. Menu Pairing Suggestions: This is a Rosé with a bit more body and structure and will therefore standup to some of our more substantial dishes like our Roast Chicken and almost any of our daily Seafood Specials. It goes particularly well with our Skate which is almost always on the menu, and also works very well with many of our Pastas and Risotto. Great with the Hand Cut Tuna Burger and our Mussels. If there is Pork dish on the menu don’t hesitate. Notes: Muga, the most traditional of Rioja’s bodegas, with not a stainless steel tank in sight, is based in the old railway quarter of Haro, capital of Rioja Alta. Founded in 1932 by Isaac Muga Marínez and his wife Auro Caño, both from winemaking families, it is run today by their three sons. Winemaker Jorge Muga leads from the front with his meticulous attention to detail in all areas of production. The cellars not only include the usual fermentation and ageing rooms but also an in-house cooperage which makes the barrels, from a variety of oak sources, which are so key to the Muga style. At any given time, there are some 17 thousand barrels here, of which around 60% are French – mainly Allier and Tronçais – while the rest are made from American oak shipped from Kentucky and Ohio. 44

2013 Jonquieres “Cuvee Cersius”, Languedoc, France | 36 Wine Description: This wine displays a superb, lively rose petal pink hue, and is fine and delicate on the nose with an array of red berry aromas which come through again on the palate. Fresh and elegant, it reveals a smooth, wellbalanced finish. QUINTESSENTIAL LANGUEDOC ROSÉS - The "rosé by Val d'Orbieu" selection is the result of a quest for the best estate vineyards in order to create an authentic, refined collection. The wines are made in a pure style, combining freshness and intensity of flavors, and are fine examples of Val d’Orbieu’s skills and winemaking philosophy. Menu Pairing Suggestions: This is a lovely rosé from a region that has been improving the quality of their wines across the board and with great rapidity. The rosés of Languedoc are now consider rivals of those from Provence. This is great glass of wine any time of the year and can be paired with our Mussels, Oysters, Salmon Tartare, Tuna Burger, almost any of our daily Seafood Specials, and during the season, is particularly delicious with our Lobster Roll and Lobster Risotto
