Bon Appétit Management Company is an onsite custom restaurant company offering full food service management by providing café and catering service to corporations, colleges and universities and specialty venues. We have over 400 locations in 32 states.

This guide is intended to help you as you begin planning for your event. Our catering staff will be happy to customize menu and service proposals to meet specific needs for your special occasion. Total pricing for the event will reflect your menu and service selections. Please review our policies and feel free to ask any questions.

Founded in 1987 as a catering company, the hallmark of Bon Appétit’s expertise is serving fresh food that is prepared from scratch using authentic ingredients. We also have made a commitment to social responsibility by supporting sustainable food suppliers and local producers.

Food and Beverage

We believe in serving only the freshest food. Food that is prepared from scratch, using authentic ingredients. Food that is alive with flavor and nutrition. Food that is created in a socially responsible manner for the well-being of our guests, communities, and the environment.

Food and beverages, including all alcohol, are to be purchased from Bon Appétit exclusively. Bon Appétit and the University of Redlands must approve any request for changes to this policy prior to the event. All food and beverages are to be consumed on the premises. Food and beverages not consumed remain the property of Bon Appétit.

In arranging for catering events, attendance must be specified by noon, ten (10) business days in advance of the event, to allow ample time for the ordering process. This number will be your guarantee. Actual attendance at your event will be compared to the guaranteed count and final billing will be based on the greater of these two numbers.

Payment

Bon Appétit specializes in quaint get togethers, full banquets, and major productions serving thousands of people for themed extravaganzas.

For all first time non-University sponsored events, a deposit of 50% of charges will be required when the catering contract is signed. The remaining balance of the total estimated charges must be prepaid five days prior to the event as contracted, by cashier’s check or money order. Unfortunately, credit cards are not accepted. For University sponsored events, the deposit is waived.

Fine catering is the challenge; creativity is our response. We’re very proud of our catering service. At Bon Appétit, we blend a tradition of fine service with creative planning and consistent event execution to bring satisfaction to our clients and customers. This brochure is designed to simplify event planning and give you a feel for our new, fresh, contemporary menu and service selections. We are here to assist in making your event everything it should be—very special.

Cancellations Refunds are determined based on the number of days written notice is received, prior to the scheduled function date. Cancellation 30-60 days prior = 50% deposit refund. No refunds are paid for cancellations under 30 days.

the catering process Booking a catered event at the University of Redlands is a painless, three-step process. From the small coffee break to an off-site extravaganza, the process is very similar and quite easy. We work with you to plan the overall design of your event, select the menu and service style, and most importantly, provide for every detail. Step One — Campus Events Your first step in booking an event is to visit or call Campus Events at (909) 748-8116. Campus Events staff check for space availability, match function size to appropriate campus locations and arrange for setup of your event, including table layout, head tables, podiums, etc. For all off campus events, please contact Bon Appétit directly. Step Two — Bon Appétit Catering Office The second step is to visit the Bon Appétit Catering office and meet with our staff to discuss your event. Bon Appétit will assist and guide you in the planning of your event specifics: type of function, menu selections, and desired services. At this point, we’ll offer the menu planning sections of this guide for use in choosing the type of food and beverage service desired. We’ll provide ideas to help you customize and create the service to make the event a success.

As a standard, we provide 4 hours of service for catered events (1/2 hr setup, 3 hours actual service and 1/2 hour cleanup). If there is a program before or after the meal, please notify the catering director when making service arrangements as there may be additional labor charge for food service requirements that extend beyond the 4 hour total service time.

Catering Minimum Surcharge Bon Appétit and the University of Redlands have established a minimum amount of $400 for catered events. If your event total, before taxes, falls below this level, a catering surcharge will apply, according to the table below. Our catering director will inform you of the applicable service charge that will be added to your event should your event fall in the under $400 category. Sales Tax Applicable sales tax will be added to food, beverage, rentals and all service charges for catered events.

Step Three — Final Contract Once these initial decisions are made, a contract will be sent to you for approval. You may make changes and return it to the catering office. A revised contract, with every detail clearly outlined, will then be provided for final approval. The third step finishes with you signing the final contract. One, Two, Three — It’s That Easy!

Although service style and menu vary dramatically from one event to another, we’ve found most clients prefer to know, right up front, the “what’s included in the price” information. For that purpose, we’ve assembled this standard package outline for your use in event planning. If a request for service is not listed as part of the standard package, it will be offered for an additional charge in the specialty service section.

Full Service Events (Single Entrée Events) Include: 1. MENU AND BEVERAGE SELECTION: As selected and priced. 2. QUANTITY: Set by your guarantee (ten business days before the event) plus approximately 5% additional provision for extra requests. 3. MANAGEMENT GUARANTEE: So that you can relax in comfort during the event, Bon Appétit provides, at minimum, one of our catering supervisory teams to oversee the execution of all service details, handle those last-minute changes or requests and ensure the event proceeds as planned, for your satisfaction, from start to finish. 4. SERVICE: All waited service for 4 hours ( 1/2 hour setup, 3 actual service and 1/2 hour cleanup). Should service expectation exceed three hours, additional labor/service charges may apply at $20.00 per hour, per staff member. 5. TABLE TOP: Complete china and flatware service. 6. LINEN: Choose from a variety of standard tablecloth and napkin colors for each table. Additional house table linens may be rented at a cost of $4.00 each.

Because catering event needs and service demands vary so much, we offer a selection of additional services to complete your event. Specialty Services are individually priced and are charged accordingly, in addition to your chosen Standard Event Package. Visit the catering office to view a variety of samples. Estimates provided upon request except where noted. White Glove service: All service staff will wear white cotton gloves for all service provisions, adding that extra touch of elegance to any event. ($15 per service staff member) Custom Floral Arrangements: Many clients prefer to build on the standard package floral services by requesting special flowers, garlands, plants and dramatic centerpieces. We are happy to work with you, one of our preferred local florists, or your choice of florist, to add the beauty only fresh floral can bring to your event. Décor Arrangements: Many catered events turn from the ordinary to the spectacular with the addition of specialty merchandising and décor. Our creative experts will be happy to suggest the right touches and the best props to make this happen for your event. We search high and low to locate party equipment rentals, theatre style props and backgrounds and the best in festive balloons to make your event spectacular. Specialty Transportation: From the wagon and horse for a country hayride to the white limo for your wedding reception, we’ll locate the right service for you.

8. SERVICE CHARGES: A labor service charge of 18% is added to all full service events. This charge partially covers our cost for production and service labor and includes gratuity for service staff.

Specialty Linens: If we don’t have the right colors or fabrics in our standard package, we’ll find them for you. Should you require additional table skirting in addition to buffet tables, we offer burgundy and black for $15 per skirt for a 13-foot table. Specialty tablecloths/ napkins can also be found with estimates available upon request. Visit the catering office to view a variety of samples.

9. MULTIPLE ENTRÉE SELECTION: In booking the event, you may decide to offer guests a choice of two entrées. If more than two are requested $1.50 p/p will be charged.

Gourmet Cupcakes: Our onsite baker relishes the chance to fire up the oven for custom designed cupcakes with your choice of flavors, fillings, icings and decorations.

Hors d’Oeuvres Receptions Include:

Cake Cutting: Includes service staff, plates and flatware. ($1 per guest)

7. FLORAL ARRANGEMENTS: Floral arrangements can be provided for $6.50 and up per table.

1. MENU: As selected and priced from the catering guide, all menu selections are arranged on buffet tables, on a variety of beautiful party trays for guest self-service. 2. BEVERAGES: Coffees, teas, juices, soft drinks, waters, as selected and priced. Arranged at buffet tables for guest self-service.

Equipment Rental: For on-campus events, arranged and priced through the campus events staff. For off-campus events, the director of catering can assist with arranging rentals.

Photographer, videographer and photo booth: We are happy to provide referrals for area photographers, videographers, and photo booth services.

We take special care in arranging all buffet tables using our collection of attractive service trays, containers and specialty platters to add visual interest and fresh garden/orchard greens, floral and other décor touches. Passed Hors d’Oeuvres — All menu items are offered on service trays, passed by our staff. Additional labor charge: $20 per hour of service, plus one hour clean up. 6. TABLE TOP: We use only high quality paper and plastic ware at hors d’oeuvres receptions: plates, utensils, paper napkins. China and silverware can be used for dinner and luncheon Buffets. 7. LINEN: All buffet tables are linen covered and skirted. For buffet luncheons and dinners, choose from a variety of standard tablecloth and napkin colors for each table. Additional house table linens may be rented at a cost of $4.00 each. 8. FLORAL ARRANGEMENTS: Vases with complementary floral colors are included on buffet tables. 9. Offsite catering charges vary dramatically from one event to another in setup, style, complexity and distance from our facility. We’ve found that most clients prefer to know — right up front — the added cost information. For that purpose, we’ve assembled this pricing outline for you to use in your event planning.

BREAKFAST SELECTIONS

1. SERVICE: Buffet — Guests serve themselves at buffet tables. Our staff will keep food selections fresh, restock and clean up for 4 hours of service (1/2 hr setup,3 hours actual service and ? hour cleanup). Disposable service ware is standard.

No substitutions, please. There is a catering service charge for events totaling less than $400. Disposable ware will be used on ‘drop-offs’.

5. DELIVERY CHARGES: For events at off-campus locations, we must add reasonable delivery charges to cover our incremental costs. Delivery charges are specifically designed to allow for transportation of food, service equipment, china, flatware, all needed linens, flowers and decorative pieces. Delivery charge for an off-site event is $200.00.

Alcoholic beverages are provided by Bon Appétit Catering and are billed on a per drink basis. All drinks are served in disposable cups. One well drink is equal to at least one ounce of liquor.

Bars may also be hosted on an hourly basis. Hourly charges must commence upon stated arrival time for the event. First hour – $9.50 per person Additional hours – $4.50 per person The hosted bar offering includes one domestic and one imported beer, house wine, chardonnay, riesling, merlot and pinot noir, our house call liquors, assorted soft drinks and juices. Service Charge and sales tax will be added to hosted bars.

Partially Hosted Bars The host may purchase a limited number of drinks, or open the bar to guests for a limited period of time. Drinks may also be regulated through pre-purchased tickets from Bon Appétit. The host will be billed $5.00 per drink price based on the number of tickets purchased. Service charge and sales tax will be added to ticket sales.

Bartender Only Services For off campus events, clients may purchase “bartender only” services. Bartenders are billed at $25.00 per hour with a 4 hour minimum. Please budget 2 hours for set up and 1 hour for clean up.
