Then I sipped on the cucumber soup, which was not too salty and the flavor was just right. With every bite, I was experiencing the food in its simple and natural taste. Sitting in the small restaurant away from the bustling city, I was happily enjoying a feast to both the eyes and the mouth. After the meal, I had a casual talk with the hostess. She told me that she and her husband felt tired working in the busy high-tech industry and the hectic schedule was gradually ruining their health. After discussing with each other, they decided to slow down and review the lifestyle they used to lead. They left the city, left the job that promised a good life, and went back to their hometown. Their old home was renovated into a small restaurant and beside the restaurant was a small vegetable garden with a few chickens and ducks walking around.

In that beautiful afternoon, I found that there are so many beautiful things in life to be experienced by heart – in a slow pace.

Eating slowly is the secret to longevity The Mediterranean people eat a slow meal which can extend to 3, even 4 hours. Slow diet is believed to contribute to their longevity. In fact, according to medical studies, there are anti-aging elements in human saliva and eating slowly encourages more saliva secretion. As you can see, eating slowly is good for your health. Here are some of the other advantages. Repeated chewing helps grind the food properly. It also encourages secretion of gastric juice to activate healthy digestion. Careful chewing increases saliva secretion, which forms a protective membrane in the stomach to prevent stomach ulcer. When you eat slowly, you feel full with less food. The chance of obesity thus becomes smaller. Eating slowly can relax your body and unwind your mind, making you happy and delighted.

The late medical doctor Ogata Tomosaburou (1883-1973) found out that a salivary gland hormone called parotin can help retain youth. Parotin can maintain the elasticity and energy of body tissues like blood vessels and skin, hence slows down aging.

Eating in love, living in peace The former owner of Bio @ PEACE Café is an Australian Pilates coach. He had to transfer the restaurant to a new owner due to some family reasons. Seeing that both of Ann and her husband Walter love the earth and vegetable cuisine, he asked the couple to run the restaurant, hoping that the concept of earth caring can last forever through the organic ecofriendly cuisines made with love. Ann says buying local food encourages organic farmers to apply natural and ecofriendly farming methods. It is a great way of taking care of local farmers and the earth. “Without using any pesticides and chemical fertilizers, the vegetable and fruit taste like heaven. You can tell the difference at the moment you put it in your mouth. Organically grown things taste very different from those grown through conventional farming,” Ann says with a hearty smile. Ann continues to say, “ We didn’t get any formal education in catering. It’s a good thing because we can have unlimited imagination for cooking. We just prepare the food and make it healthy and delicious. In order to carry our ecofriendly concepts through, all of our leftover waste is composted for the use of nearby vegetable gardens.” “Can we have a look at the gardens?” we ask. “Of course! But we need to take a short walk to get there. The rain in the morning has made the trail slippery….”We followed Ann to the garden nearby. We saw a bamboo canopy over the compost pile, beside which is a small garden of lively greenery. Walking back to the restaurant, Ann feasted us with many delicious cuisines and sweets. It was really enjoyable. The food seemed to have a life of its own. We know where it came from and how it was cooked. Most important of all, the food was prepared with love and care. In the tasty food, we saw the respect for human beings, the land, and all creatures on earth. Eating in love and living in peace - that is the kind of pure happiness everybody should experience.

Eat for the Earth The food supply in early Taiwan was extremely limited and many people were generally left without enough food. As a result, people liked to greet each other with “Did you have your meal yet?” as a way of exchanging loving kindness and friendship. Now most people are amply fed, so more and more people are shifting their attention towards food issues like how to make the food healthy and ecofriendly. Follow the suggestions below. You can also do something for the planet!

Choose low carbon diet Choose a diet that helps reduce carbon emissions.1 In fact, you can be of help to the earth if you pay enough attention to how the food is grown and discarded. For example, you can eat vegetable and fruit in season. Season vegetables or fruits grow strong and need less chemicals and fertilizers, as a result, it contains less toxic residues. It is also important to buy the right amount. According to studies, as much as one third of food produced annually worldwide is discarded before eaten. About one fourth of it is enough to feed the hungry people worldwide. 2 So, think twice before you put another pack of potatoes in your shopping bag.

Support fair trade food Fair trade is a social movement with the stated goals of eliminating exploitation and promoting appropriate rewards to farmers. Thanks to the popularity of fair trade coffee, now fair trade has become a well-received idea. For instance, two chefs in Peru buy potatoes from small farms and turn the produce into various cuisines and sweets. They not only create new potato recipes but also help increase the income of potato farmers of small-scale operation.3 In this example, we can see that professional chefs can contribute to social change if they work hand in hand with farmers and consumers.

Think twice before buying GMO’s Genetically modified crops used to be regarded as the best solution to food shortage. However, most people only got to know about t h e e nv i ro n m e nt a l d raw b ac ks of G M O’s when it was too late. Some scientists declare that modified crops show stronger resistance to diseases and pests, thus guarantee high yielding. According to this logic, it can be expected that the demand for pesticides should show a significant drop. Ironically, studies show that the use of pesticides in the United States in 2011 increased to an incredible amount of 183,000 tons! Based on this fact, choosing food from non-GMO sources should be better for your health and for the plant, too. According to a survey conducted by Formosa Cancer Foundation (FCF), about half of the obese children are permitted to eat candies before a meal, and as high as 63.5% of parents give lavish supply of sugared drinks to their kids. Junk food is too popular Today most parents are busy with their jobs. Time is usually so pressing that they don’t have enough time to prepare healthy meals for their kids. Greasy hamburgers, colorful candies and overlysugared drinks are usually kids’ top favorites. Without some form of “improvement”, the food just looks boring

The one-dollar lunch meal In Hsinchu, a county in northern Taiwan, every elementary student gets TWD$32 (approximately 1 US dollar) from the government for one school meal. The meager amount is barely enough for a beverage in Taiwan, yet He Xing Elementary provides two organic meals every week within the limited budget. “We’ve been tracing the amount of leftovers for a long time. The information allows us to precisely estimate the food consumption of students of different ages. As a result, we provide only the proper amount of food for students, which in turn keeps the leftovers to the minimum – just about 1-2 kg of leftovers for each meal (an incredibly low amount given the fact that there are about 200 students and teachers). It makes the organic meal possible because we cut back the cost significantly,” said the school meal coordinator Tien. He went on to say: “An organic meal is not only good for the students. It also helps local small farmers.” He Xing Elementary even buys organic soybeans with the revenue generated from meals and provides homemade soybean milk to students as a supplement to their breakfast. Seeing the students sipping on the warm tasty soybean milk, we can tell that they prefer this kind of natural drink to beverages loaded with additives.

Kids love DIY Kids were playing a food tournament when we visited the school. In one of the checkpoints, students were taught to make fig jelly by themselves. They were also asked to compare the handmade jelly with that bought from the supermarket, and the handmade jelly would be served after lunch as a snack. “Kids just love eating the food they prepare by themselves. In last semester, we taught our students to make potherb mustard. Speaking of potherb mustard, most kids just don’t like it because of the bitter taste, but our kids finished the fried potherb mustard happily on that day,” said Rui-xiang Lu, the principle of He Xing Elementary. Allowing kids to make their own food creates a sense of achievement, which makes the food taste even better. It is no surprise that the kids ate up all the fig jelly on that day.

Organic meals make big changes! Organic meals are just a beginning. So many beautiful changes have been taking place. A student once ran to the principle saying: “Principle! I saw a candy wrap in the men’s room.” It turns out that a part-time English teacher brought the candy to school as a

reward for students. A small candy wrap caused such a commotion! It can be concluded that candies or snacks are commonly seen in the school. “The teacher for the first grade Jia-yu also offered her observation: “At first students bring things like candies and chocolates to school. But most of them turn to biscuits, even home-

As par t of the alliance, H e Xing Elementar y systematically introduces concepts like fair trade, food miles and organic diet to students as well as their families. Additionally, part of the school land is turned into a garden for kids to grow vegetables themselves. Through this personal involvement, kids learn to be thankful to the food on the plate. It also gives kids firsthand access to natural food.

For Kids, Colorful Means Tasty Knowing that nutrition is crucial for kids, so in Taiwan each elementary school has to assign a nutritionist. The nutritionist is responsible for checking the hygiene of kitchen facilities and gives food education to students twice a semester. Schools are further required to hand out the lunch menu of the following month in advance for trophic analysis to ensure proper nutrient intake. When asked what kind of food is attractive to kids, the nutritionist of He Xing Elementary Rong-xiu Liu says: “Food with rich colors is attractive to kids. Sometimes kids reject the food simply because it looks dull.”

In the afternoon about 4 p.m., people in the Green Headquarters were bustling around with excitement. On the floor were placed personal items from all of the staff members, including shoes, articles for daily use, bags, leather goods, toys, baby accessories and a painting by one of the designers. There were too many things to choose from. “This is the souvenir I bought when I traveled abroad. It’s special, isn’t it?” “This was my favorite toy when I was a kid. What a surprise that we are from the same generation….” “Wow. Are these bead ornaments all made by your mother? Where did she learn to make it? She is so talented!” “This pair of glasses is my father’s best companion when he was young. Now the vintage is in fashion. Wanna try it on?” “My sister bought these high-heels for dating. But she doesn’t like this kind of shoes at all. She wore them only once. As you can see, they are pretty new!”

When I started this beauty salon, I decided to make it energy-saving and eco-friendly. To help customers choose healthy and ecofriendly haircare products is also part of my goal,” said Manson about his concept. For him, making money can also benefit other people and the earth if you choose to do the right thing. Due to advanced communication technologies, now it is easier for customers to get access to all kinds of information. As everyone can imagine, the hairdresser is no more making all decisions and customers usually have a strong view about the services they receive. “For example, many customers pay more attention to the ingredients of a product and their source than before. When knowing that the brand they are using is e c ofrie ndly, they usually fe el a higher level of psychological satisfaction,” said Manson.

Healthy Hair Starts with a Healthy Scalp The scalp is the root to healthy strands Healthy hair is impossible without a healthy scalp. Growth and development of the hair is closely linked to scalp condition. Dermatologists point out that the scalp plays a key role in the hair condition because it is the place from which the hair grows. When the secretion of sebaceous glands on the scalp is not in good balance, the secretions (mixture of oil and dirt) instantly cover all the hair follicles – a good environment for the growth of bacteria. If the secretion keeps jamming around the follicles, the physiological balance of the scalp will be damaged. If the scalp condition is getting worse and worse, hair loss then becomes a sure thing.

Tips for a healthy scalp Scalp problems can be attributed to many reasons. Unhealthy scalp can lead to weak follicles and fine, coarse hair, and eventually resulting in hair loss. Here are some tips to share. Avoid chronic fatigue, tension and inadequate sleep. Keep an eye on your diet and avoid taking too much spicy food to avoid endocrine disorders, which can disturb water-oil balance of the scalp. Seek medical advice if you suf fer from seborrheic dermatitis to prevent blocked hair follicles. Choose natural scalp cleaning and haircare products to avoid irritations, unhealthy scalp metabolism and blocked hair follicles. Use proper products to control oil secretion and keep your scalp in good shape.
