Food Focus: Paris/Bruges/Ardennes Wednesday, May 20, to Sunday, May 31, 2015 Join foodie tour host Lori Chisholm on a small-group (max 12) journey that will satisfy your palate and your sense of discovery. You will have an opportunity to visit all of the must-see sites; however the focus will be on food and drink – chocolate, champagne, great wine, cheese, beer, game, frites and more. This is a tour with some great historical and cultural inclusions that marry well with the flavours of France and Belgium. Tour price, based on double occupancy: $3,995 CAD from Toronto (Take off $175 when paying by cheque!!)- Single room supplement: $535 PROPOSED ITINERARY: Day 1 - Wednesday, May 20: Evening departure from Toronto, via Air Canada with direct service to Paris. Full inflight services including dinner, a snack and entertainment provided. Day 2 – Thursday, May 21: Our early morning arrival in Paris will let us enjoy a panoramic tour of the city in our private coach, allowing us to orient ourselves to all the major sights. We’ll settle into our Latin Quarter hotel (www.hotel-saintchristophe.eu/ ) for one evening, and wander about this neighbourhood, one of the oldest in Paris. Let’s officially begin our foodie adventure with a Seine River Champagne Cruise, followed by a bienvenue dinner in a local, typical bistro. Day 3 – Friday, May 22: This morning, after a leisurely breakfast, our private coach will pick us up at the hotel for our transfer to Bruges. On the way to Bruges, we will lunch in Beaumont-Hamel and then visit the impressive Canadian World War I war memorial in Vimy Ridge. We’ll then cross into Belgium and travel through Flanders Fields to Bruges, perhaps the best-preserved medieval town in all of Europe. We’ll settle into our hotel (www.hoteltzand.be/en ) and enjoy a free evening. Lori will be available to suggest some great neighbourhood restaurants for dinner. Day 4 – Saturday, May 23: After breakfast, we’ll spend the morning on tour with our personal Bruges guide who will orient us to the famous Markt with its Belfry, the gothic town hall, the Chapel of the Holy Blood and the Church of Our Lady with its own Michaelangelo statue. We’ll reconvene after lunch at 2:00 for a visit to the chocolate museum and a private, hands-on chocolate truffle/praline workshop.

Day 5 - Sunday, May 24: After breakfast, we’ll have the morning free to wander, perhaps take a canal tour. We’ll meet up again for our private beer tour & tasting at De Halve Maan, a pub renowned for its quality and quantity of beer, at 3:00. Lori will be available to help with dining decisions. Day 6 – Monday, May 25: After a leisurely breakfast, we depart Bruges in our private coach for Fosses-la-Ville, a small country village in Wallonia, the French-speaking region of Belgium. Our home for the next two nights will be Le Castel (www.lecastel.be), a local country inn with a fine restaurant. En route, we’ll make a brief stop in Ghent for sightseeing and lunch. We must be at the inn in time for our three-course dinner, prepared by Jean Louis Mathy, chef at the inn. Day 7 – Tuesday, May 26: After breakfast, we’ll take a day trip to Brussels with a focus on the Grand Place, one of the finest squares in Europe. This will be a perfect opportunity to relax, shop, sit in cafés and watch the world go by. No set plan in Brussels but we have to be back to Fosses-la-Ville by 5:00 pm for our private cooking class and four-course dinner at the inn. Day 8 – Wednesday, May 27: This morning, we’ll head off in our private coach for the Champagne region of France. We’ll be passing through the beautiful Ardennes Forest to meet our host champagne producers in Sacy. Our visit will include a private tour of the vineyards, lunch, featuring local produce, in the village and a champagne tasting back at the family domaine. Overnight in Reims (or Paris TBD). Day 9 – Thursday, May 28: After breakfast today, we’ll return to Paris to the Hotel Saint Christophe. After resettling, we should have time to visit the Louvre and/or the Musée d’Orsay, perhaps climb the Eiffel Tower. We might enjoy a walk up to Montmartre or a stroll through the Marais. This day is completely free to do as you wish. Lori will be available with activity/shopping/tour/dining suggestions. Day 10 – Friday, May 29: Today will be a full day as we join our guide for an adventure in Versailles. We’ll take an early train to the village where we’ll have an exclusive tour of Louis XIV’s kitchen garden, the Potager. We’ll wander the local market to pick up our appetizer course for our 4-course lunch at a local restaurant. After lunch, we are booked for a private tour of the Palace of Versailles. Our train back to Paris should get us home in time to relax a little before dinner on our own.

Day 11 – Saturday, May 30: We will have the whole day free to do that last-minute souvenir shopping, sight-seeing or wine tasting. We’ll convene for our farewell dinner at Le Foodist, for a 5-course gastronomic meal with matching wines. Our hosts are a chef and sommelier who are infamous for their anecdotal approach to food and wine.

Day 12 – Sunday, May 31: After an early breakfast, we’ll take our private transfer from our hotel to Charles de Gaulle Airport for our flight home.

RESERVATIONS AND DEPOSITS: Reservations should be made as early as possible to ensure the departure of your choice. A deposit of $750.00 is required at the time of registration. Your reservation is confirmed upon receipt of your deposit and application form. No reservations will be accepted without a signed application form. REFUND OF UNUSED ARRANGEMENTS: Because the rates of Pauwels Travel Bureau Ltd. are based on group participation, no refund can be made for any tour accommodation or tour service or tour feature not taken. If cancellation occurs while the tour is in progress, no refund can be made for the tour portion not taken. We strongly suggest that to allow for any unexpected contingencies, you purchase the all-inclusive insurance. CANCELLATION POLICY: Refund of deposit is made if cancellation is received in writing by Pauwels Travel Bureau Ltd. more than 90 days prior of the departure date of the tour less a $500.00 non-refundable administrative fee per person. For cancellation received in writing 90 days prior or less the following cancellation charges apply: 90 days to 46 days before departure: 25% of tour cost 45 to 31 days before departure: 50% of tour cost Within 30 days prior to departure: 100% of tour cost RESPONSIBILITY: Pauwels Travel Bureau Ltd. reserves the right without notice, to withdraw any part or all of the tour. Factors such as airline schedule changes, hotel overbookings, inclement weather, etc. February necessitate changes in the itinerary as outlined. There may also be other circumstances in which changes become necessary or advisable. Any savings realized by these changes will be passed on to the passengers, any resultant expenses shall be borne by the passenger. Pauwels Travel Bureau Ltd. acts only as an agent in securing hotel, transportation and other travel services and in no event shall be held responsible for the failure by any person or company to render any transportation, lodging or other travel service to be provided on the tour. All hotel, transportation and other travel services are provided to tour members subject to all the terms and conditions under which they are offered to the public generally. The acceptance of the initial service to be provided under the tour shall be considered an acceptance by the tour member of those conditions. Pauwels Travel Bureau Ltd. also reserves the right to decline, to accept or retain any person as a member of the tour, in which case equitable refund will be made at the discretion of the tour operators. AIR TRANSPORTATION: Transatlantic economy flight by scheduled IATA carrier(s), based on an economy class group fare. All fares are subject to specific rules and regulations, to changes and to government approval. Deviations from the group flights are possible but subject to higher rates. Pauwels Travel will research any request for date or routing changes at the time they are requested. Should any individual rate be less than the group fare plus airline and administrative fees, the lower rate will be offered to the tour participant. Individual airfares are subject to immediate ticketing and the fare plus taxes must be paid at the time the ticket is issued by the participant requesting the change. Should the group airfare be the lowest available rate, an administrative fee of $50.00 plus any airline charges will apply.
