Introduction Welcome to CottonCandyExpress.com! Your home of the complete line of gourmet Clown Cotton Candy, cotton candy supplies, and cotton candy machines. We hope you find this manual helpful in providing you with interesting facts, tips, procedures, and recipes on how to make mouth-watering cotton candy. Please feel free to give us a call at 1-800-871-1491 or email us at [email protected] with any questions or concerns you may have while reading this manual. Let us at CottonCandyExpress.com help bring the kid out of you or let your next neighborhood event be a big hit! History of Cotton Candy Originally called “Fairy Floss”, the process of making Cotton Candy was invented by four men: Thomas Patton, Josef Delarose Lascaux, John C. Wharton, and William Morrison. In 1899, Morrison and Wharton were able to patent the first electric cotton candy machine, which used centrifugal force to spin and melt sugar through small holes. In 1904, these two Nashville candy makers introduced their invention of how to make cotton candy to the St. Louis World’s Fair. Due to fair goers’ curiosity, these inventors sold approximately 68,655 boxes of cotton candy for 25 cents a box for a total of $17,163.75. Back then and today this is a great deal of money, just think of the profit that you could make today selling such a low cost and enjoyable product! In 1900, Patton obtained a patent for his invention of making cotton candy. Using a gas-fired rotating plate to spin caramelizing sugar, he was able to form threads of cotton candy with a fork. In addition, he introduced his invention to the public at the Ringley Bros. Circus. Boy was it a hit! Even though he never received a patent, dentist Josef Lascaux introduced this popular candy to his Louisiana dental office. About 50 years later, in 1949, Gold Medal Products launched a cotton candy machine that had a spring base. Like any other invention, this cotton candy maker was more dependable than the past machines due to the help of new knowledge on how to create a better machine. From here own, cotton candy has been a hit and still is today. Whether you have tried this tasty treat at a local fair, circus, or from a school fund raising event, we hope that the next time you enjoy this delicious candy you will think about the interesting history of such an enjoyable food. How Cotton Candy is made? Since Cotton Candy’s main ingredient is pure sugar, this low cost candy is extremely simple to make. The process first involves the sugar melting into a liquid form that is spun inside of the cotton candy machine. Next, the machine forces the liquid state of the candy through small holes that shape and then cool the liquid sugar. When it finally cools, the sugar changes back from a liquid state to a solid state where it can be collected and served on a stick waiting for you to indulge this tasty treat!

Directions on how to Create Cotton Candy Like any thing else, practice makes perfect. The more you practice making cotton candy the better your finished product will be. If you follow these simple and easy directions, you should not have any problems with making it. Any age can make this enjoyable treat, however we do suggest adult supervision when children under the age of 18 operate a cotton candy machine. We do advise that you practice making the cotton candy a couple of days before you plan on serving this at your next get-together or fundraiser event so that you can get the feel of how to make it. After practicing, you may realize that you need other supplies or you may learn do’s and don’ts that will allow you to make a better product. If you do not own a machine, your first step is to buy one from us at CottonCandyExpress.com where we will be more than happy to assist you, or you may rent one from your local restaurant supply store or rental store. Here are ten simple directions that we hope will help make your cotton candy a hit! 1. Use a clean, damp cloth to moisten the inner part of the floss pan, which enables the floss to stick to the pan 2. Observe the direction that the floss is spinning off of the floss head 3. Alter the floaters which are located on top of the spinner head -Up for more lift -Down for less lift 4. Grab the cone at the pointed end and hold it an inch or two between your thumb and two fingers 5. Use a light flicking motion to break into the web of floss 6. Hold up the cone that should have a ring of floss attached to it and wind the floss onto the cone; Use a clean, damp sponge to brush the cone if the floss does not appear to stick to the cone 7. Important: Only roll floss on outside of pan 8. In order to make a larger web, use a “figure-8” motion to turn the ring of floss onto the cone; once you have become an expert, you might want to lift the ring of the floss out of the pan with just a flick of the wrist 9. At last, either enjoy or sell your mouth-watering treat! Tips and Suggestions With our tips and suggestions, you should have no problems making cotton candy. If you bought a machine from CottonCandyExpress.com look at the product or warranty information for additional information or tips on how to use the machine. If you have rented the machine, contact your local rental professional for ways he or she may advise or suggest you using the machine. Here are additional tips and suggestions that we have found to be helpful! 1. Let your machine run for a couple of minutes or heat up before you add the sugar. This helps prevent one from making grainy cotton candy. 2. Always....Always add the sugar when the motor is turning. 3. Fill sugar to a capacity of 90 percent full. www.CottonCandyExpress.com ©2004-2007 Mary Mack’s, Inc.

5

www.CottonCandyExpress.com 1-800-871-1491

4. In order to reduce and eliminate the smoking of the machine, lower the “heat control fine-turning”. 5. Raise the heat control setting if the floss is too thick; lower the heat control setting if the floss is too thin. 6. Use the machine in an area where humidity is low, which enables you to produce fluffier cotton candy. Unfortunately, humidity may cause the candy to shrink. 7. When storing the cotton candy into bags or containers, it is best to seal them tight or not allow any air into the container. Sometimes if air gets in the container it may discolor, shrink, or clump up the candy. 8. May use 100% pure cane or beet sugar. Regular granulated sugar is also recommended. 9. Never use extra-fine granulated sugar or “free flowing sugar” which may clog up the machine. 10. Avoid using flavors that contain a gum or starch base due to the fact that they burn out the ribbons. 11. To create brighter colors add one tablespoon of flossine per 5 pounds of sugar. 12. MOST IMPORTANT: Always use adult supervision when a child under the age of 18 is using a cotton candy machine. In order to keep your machine operating and running efficiently is best that you clean it after each use. By following these tips, it will help reduce any malfunctions one may encounter in the future with any machine. Cleaning Tips for Cotton Candy Machines Make sure all of the sugar is out of the floss head by running the machine until the sugar is completely gone. In order to remove carbon from the ribbons, be sure to empty the machine and turn the heat to the highest setting for at least one minute. Always unplug the main electrical supply cord after using the machine. Use a clean, damp cloth to wipe off the floss head with; NEVER allow water directly into the floss head Make sure all parts are dry before operating the machine the next time that you use it or before you return it back to the rental store. Profitability and Cost Did you ever think cotton candy could ever be so profitable? Well, guess again! Due to this low cost candy, you may be surprised on just how much you can make and charge for this special treat! For example, a typical serving of cotton candy is either 1 oz on a cone or 2 oz in a bag. Depending upon the state in which you live in, you may be able to sell it as low as a $1.00 or as high as $2.00. Your price will be reflected upon the amount of time and cost that you have in the product. Your main cost will come from the sugar and the way in which you package the cotton candy. You may either sell it in bags or containers, or straight off of the cone. Another cost you may have to consider is the rental cost if you rent the machine. We have found the average cost to be any where from $40 to $60 day. Location also plays a big part in determining the www.CottonCandyExpress.com ©2004-2007 Mary Mack’s, Inc.

6

www.CottonCandyExpress.com 1-800-871-1491

price of the candy as well. If you have a great deal of competitors, you may want to sell it at their price or even at a lower price to create a higher demand for your product. If you are the only one selling the product, you then have the advantage of setting the established price. Remember to set it at a reasonable price in hopes of creating repeat customers. For example, your main cost in a 1 oz serving of cotton candy on a cone would be approximately $.052 for the flossugar and the cone would cost $.016 for a total cost of $.068. Your profit on a $1.00 cone would be roughly $.932. If you sold the same cone for $2.00, your profit would be $1.932. In a 2 oz serving in a bag, the flossugar would cost roughly $.104 and the bag would cost $.042 with a total of $.146. Selling a bag for $1.00, your estimated profit would be $.854 per bag, and for a $2.00 bag it would be $1.854. Now, does this help motivate you to start selling cotton candy? As you can see the profit margin is huge; so what are you waiting on? Nutritional Information of Cotton Candy In a 1 oz serving of cotton candy, there are approximately 105 calories and zero fat. In addition, there are 26.3 grams of carbohydrates in this serving. Since cotton candy is made from sugar, the calories come from the carbohydrates. In a 2 oz serving, the nutritional information would be doubled and approximately consist of 210 calories, 0 fat, and 52.5 grams of carbohydrates. Based on this data, you can easily estimate any nutritional information depending upon the serving size of cotton candy that you prefer to sell or consume. Now, that you have learned some interesting facts and information about cotton candy, the rest of this manual describes the supplies and machines that we sell that are ideal for anyone who is interested in getting into the Cotton Candy Industry. Once the unit is on location and set up you should not have to adjust the controls. Making cotton candy has never been easier. www.CottonCandyExpress.com ©2004-2007 Mary Mack’s, Inc.
