A FEW WORDS... From Loire Valley to Languedoc-Roussillon we personally select small top quality artisan producers to have a direct and personal relationship with all of them.

We do not choose our wines according to brand awareness or media marketing; neither do we buy according to points or ratings (though some of our wines are highly rated). We follow our passion for wines that show a place, a soil, an area, a terroir with true character and honesty.

Here are some principles we believe in when it comes to wine making and farming: -

Wild yeasts

-

Hand harvesting

-

Balance

-

Organic/Biodynamic farming

-

Low yields

-

Minerality

LANGUEDOC

DOMAINE LA TERRASSE D'ELISE The small domain of La Terrasse d'Elise was created by the extra-ordinary winemaker Xavier Braujou in 1998. His vines and wines are treated differently from others : without labelling “organic” or “bio-dynamics”, his vineyards are at highest level of natural culture. He is one of the last wine makers to graft his own vines in the vineyard, allowing him to continue a “massal selection”, choosing the vine stocks from within his own domain, with no clonal vines. 85% of his land is within the AOC Appellation, but all wines are labelled as Vin de Pays, allowing himself to have more freedom in his “creation” in his wines : each varietal has a maximum and unique expression in his vineyard. No wonder he has now attracted a lot of attention from wine experts and passionate, in France and elsewhere, even with his very discreet personality.

XB Red 2010 – Domaine la Terrasse d'Elise

VdP de L'Hérault

100% Syrah

12 months in tank Antoine Petrus, Best Young Sommelier of France : Garnet-red colour with purple glints. A large aromatic range of fresh fruits on nose like blueberry, red and black currants. Airing brings amplitude to the wine.

Frank attack in mouth, followed by a fresh and firm acidity, mixed with crunchy tannins bringing a nice softness. The finish keeps this whole delicacy with full softness.

Le Pigeonnier Red 2012 – Domaine la Terrasse d'Elise

Code : D01013-10-0

VdP de L'Hérault

100% Carignan

12 months in oak barrels Garnet-red robe colour. Full and frank ripped red fruits, pepper and garrigue nose. The mouth is silky, floral (dried roses) and turns to a discreet freshness with red fruits flavour. Fine and delicate tannins with a long finish.

Our Note : Le Pigeonnier is one the best wines from Xavier Braujou, which already has a lot of devoted followers in France. It's one of the strength of Xavier Braujou, a wonderful Carignan expression but without over-extraction and with a significant freshness which makes it sapid. L'Enclos Red 2013 – Domaine la Terrasse d'Elise

VdP de L'Hérault

1 year in new barrels Intense and deep red hue. Intense blackcurrants, dark chocolate nose with a tones of flower scent. Impressive density and volume in mouth. Silky, soft and fine texture with fine black fruits aromas and also a beautiful and complex finish.

Our Note : Xavier has once again succeeded in making a “generally-considered-as-rustic” varietal into an elegant and balanced wine. While keeping the power and concentration of the Mourvèdre, L'Enclos has shown the typical signature of Xavier: very fine and fresh with amazing finish.

Elise Red 2005 – Domaine la Terrasse d'Elise

It was made after a specific sorting of grapes during the harvest, the best bunches being left on the vine for a

short over-maturation. The maceration was pushed to 50 days and the ageing to 2 years in barrel, resulting in a magnificent wine that marry power with elegance. Code: D15043-10-0

DOMAINE LEON BARRAL Didier Barral founded this unique estate in 1993 in the small hamlet of Lenthéric on a terroir dominated by schist and wild garrigue. He named the domain after his grandfather and quickly decided that biodynamic practices were the best choice for farming his vineyards. With his brother, they are men with strong believes seeking for the most authentic expression in each wine they carefully make. Soils are not ploughed and no weed killers are used, a team of cows, pigs and horses graze and manure the cover crops in and around the vineyards. Respect for the ecosystem, interactions between animal and vegetal reigns as well as healthy microbiotic activity in the soil are core concerns for Didier Barral. Most of his vines are very old, but vary up to ninety years of age, keeping yields naturally low. Once in the cellar, grapes are never destemmed and fermentations take place in concrete tanks without SO2. Red Faugères from the estate display power, rusticity, incredibly fresh and pure fruit. Because of their uniqueness, their profound artisanal and original character, Domaine Léon Barral’s wines are nowadays among the references in Languedoc.

DOMAINE DE LA RECTORIE Domaine de La Rectorie is located in a very specific place of Roussillon : Collioure, 20 km from the boarder with Spain, a small village built in terraces between mountain and sea, where vines are planted on very steep slopes. The domain is run by Thierry Parcé and his son Jean-Emmanuel. They manage 30 hectares of vineyard spread in 30 small plots. Depending on different exposures, altitude, grape varieties, distance to the sea, nature of soils where schist always dominate, they work by families of plots representing micro-terroirs. In the old plots, different varieties are planted together: Grenache noir (around 70%), Grenache gris (close to 20%), Carignan (about 10%) and some Grenache blanc. The new plots were planted in the 80s with Grenache noir, Syrah and Mourvèdre.

Created in 1963 by Georges Delille, Domaine de Terrebrune benefits from an exceptional and unique location within the AOC Bandol. Soils, climate and organic farming are the keys. The vines are the only ones to lay on Trias soils composed of blue limestone, very rich in minerals and nutrients. This bedrock lends a more noticeable minerality to the wine than others. The gentle maritime breezes funnel airing into the vineyards directly from the Mediterranean sea, cooling the grapes from the bright sun is also another factor in safeguarding the freshness. Terrebrune’s Bandols are different. There is a more ethereal quality to them, a real freshness, a connection with the soil…

CHÂTEAU SIMONE Château Simone is unusual in every aspect. The oldest vines were planted in 1891, even the experts are unsure of the variety of some of the old vines, which were planted as a mix of varieties. René Rougier and his son Jean-François, who runs the Château with his family, and who has worked the vineyards since 1952, has never replaced a vine during all his time on the domain. Their vineyard is farmed on north-facing limestone rubble on the side of the Arc Valley with a large range of grape varieties featured, of which some vines are over 110 years old. Palette is a tiny appellation in Provence with only 4 wine producers, 23 hectares out of 45ha of AOC Palette belong to Chateau Simone. Thanks to the exceptional quality of wines and the uniqueness, Château Simone has been served at the table of the Elysée (Official Residence of French President) for almost a decade.

Ageing: 1 year on lees in big barrels, 1 year in barrels The white wine, brisk in its youth, animated by a bouquet of pine-resin and subtle floral aromas (lime, acacia, vine flowers) evolves slowly into a sensual masterpiece with its lingering finish built on a mass of minerality.

This is a remarkably age-worthy wine with the potential to give ever-more pleasure over a span two decades or more. With ageing, the wine develops a remarkable bouquet which is delicate, powerful and very original (abricot, walnut, resin, parline, honey).

DOMAINE HAUVETTE Dominique Hauvette is a woman of character and convictions. Thirty years ago, this genuine lady started farming 2 hectares of vines without any fertilizers or herbicides. The estate now covers 17 hectares and the vineyards are cultivated using Biodynamic farming methods. The AOC Baux-deProvence (only 300ha) is located in a sheltered yet arid environment where the aromas of cistus, lavender, thyme, rosemary and savory adorn the air at the foot of the Alpilles. In the cellar, the wine is made in utmost respect of its terroir. Spontaneous fermentations in eggshaped concrete tanks are the norm and a minimal amount of sulfur is added only at bottling. Old oak casks are used for slow aging of the red wines. Today, Dominique is considered to be one of the most brilliant winegrowers in southern France.

Located between Aix-en-Provence and Sisteron, Domaine de Rousset is a singular and isolated estate away from the main areas on the right bank of Durance River. Unlike the majority of the domaines, vines there grow on North-facing slopes away from the heat and enjoying the Mistral almost every day. The estate has been within the Emery family and passed down from generation to generation since the 19th century with the same objective: revealing the best of wines from Northern Provence. Today the 27 ha of vineyards are managed by Thomas Emery and organic certification was obtained few years ago. Near the remote village of Tarabucetta, outside of Figari on the southern tip of Corsica, Yves Canarelli has made quite an impact not only in Corsica, but on mainland France as well, running the estate with a strong passion and a real willingness to focus on quality and character. Figari is regarded as the most ancient growing region of Corsica where grapes have been cultivated since the 5th century B.C! Located on a granitic coast, Clos Canarelli is the spearhead for the preservation and promotion of local and indigenous grape varieties in Corsica. The biodynamic wines produced there are the pure definition of tradition: wild yeasts, slow and precise fermentations, long aging (18 months) in old foudres and no filtration for the reds. Like his Corsican colleagues, Yves sells most of his production on the island and this is a great honor for us to promote these wines of character in Hong Kong.

DOMAINE JASMIN Based in Ampuis, in the heart of Côte-Rôtie, Patrick Jasmin and his wife farm 5 ha divided in eleven plots of land in eight lieux-dits on steep granite and schist slopes. Winemaker from father to son for four generations, Patrick is a strong defender of the ancient version of Syrah called Petite Serine and known for its beautiful aromatics, smaller berries and seeds, and lower yields. Everything is done by hand at the estate, from the harvests (100% destemmed) to the pigeages with the same goal: revealing the fruit and the personality of each plot. Aging takes place in both Burgundian barrels (228L, 300L and 400L) and in 600L demi-muids, 10% of which is new, depending on the year for 24 months before bottling. Adherence to tradition and respect for terroir are at the heart of Patrick’s philosophy, a stark contrast to the growing trends of long macerations and use of new oak

Vincent is the nephew of Cornas legend Robert Michel who retired in 2006 and passed down the famous plot La Geynale to him. After an intensive training by his uncle, the young man decided to bottle his own Cornas, today the estate covers 5 ha within the appellation. The philosophy is traditional: low yields, whole-bunch fermentation, long aging in old 400-litre oak casks, no sulphur in the winemaking and no filtration. The wines are pure, intense, showing earthy and mineral character with hints of licorice. The Cornas Granit 30 and 60 designations refer to the soil, the approximate age of the vines, and the slope (30% and 60%) on which they are planted. La Geynale made from old vines planted in 1910 is a real masterpiece and one of the best Northern Rhône wines. DOMAINE DES LISES Maxime Graillot, son of famous Crozes-Hermitage legend Alain Graillot, began making very small quantity of Crozes-Hermitage with the 2004 vintage from plots located in Pont-de-L’Isère. There the soils are full of gravels and alluvial stones, low in clay and fast draining, much like his father's more northerly plot in Le Chêne Vert. Planted in the early 1980s, the vineyard is farmed organically, the grapes are hand harvested and yields are low. A few years ago, Maxime decided to use horse ploughing to avoid ground pressure compaction and to increase planting density. Unlike Domaine Alain Graillot, 80% of the grapes are destemmed before the fermentations in concrete tanks. Aging takes place in different types of old barrels: 225L, 600L and large oak tronconic vats, no new oak is used in the cellar. DOMAINE BOIS DE BOURSAN Domaine Bois de Boursan is one of the few estates who stick to absolutely traditional methods and the wines stand out for their wonderfully classic and typical Chateauneuf-du-Pape aromas. The estate was founded in 1955 by Jean Versino who was Piedmontese by origin. It is run today by his son, the passionate and enthusiastic Jean-Paul Versino. Most of the vines are between 50 to 100 years old divided into 27 plots that are spread all over the Châteauneuf territory. This variety of soils, exposures, subsoils, microclimates makes the three wines produced by the domaine ones of the most complex of the appellation. Like in the old times, grapes are not destemmed, aging takes place in old foudres and over extraction is always avoided. Bois de Boursan is “textbook”, old-school Châteauneuf with flavors and aromas of lavender and notes of kirsh liquor, garrigue and pepper spice. Nothing flashy or opulent, just purity and finesse.

This domain located in the village of Beaumes de Venise, in the shadows of Mont Ventoux and the Dentelles de Montmirail is run by the brothers Soard, Patrick and Vincent. Their great-grandfather Casimir Soard was one of the first to bottle wine in 1902 and the first to win gold medals in national wine competitions. Three main types of soils can be found: sand, pebbles and claylimestone terraces in the heart of the Dentelles. The grapes used for the Muscat de Beaumes-de-Venise are best when planted in poor, sandy soils. The key is to harvest at the perfect level of maturity while reaching balance between sugar and acid in order to avoid making heavy and sticky dessert wines. The Fenouillet Muscat is a pure marvel, a model of balance and complexity. The Soard family has always cultivated vines with great concern for the environment and now all of the wines produced at the domain are certified "organic".

DOMAINE LA BOUISSIERE The story of the estate started in 1950 when Antonin Faravel (father of Thierry and Gilles) planted his first vines at high altitude (400 m) on a terroir called “Beauregard”. Throughout Gigondas’ history, Mr Faravel is the man who planted the most vines in high altitude in the middle of the Dentelles de Montmirail mountains. Today his two sons are actively running the estate, Gilles in the vineyards and Thierry in the cellar. No herbicides and pesticides are used in the entire vineyards, given the fact that the vines are located on steep hillsides at 400-500 m the amount of work is huge! In the cellar, the style is very traditional: whole-bunch fermentation in concrete tanks, light extraction and long maceration, aging in old barrels. A bottle from Domaine La Bouïssière is, in essence, the pure expression of the mountain, chalk and the cold.

Harvests are entirely done by hands in small baskets and the grapes are strictly sorted at the cellar. Fermentation starts with natural yeasts at controlled temperatures in stainless steel tanks. CHÂTEAU MONTAURIOL Mons Aureolus (Golden Mountain according to the Romans), the terroir of Château Montauriol has crossed more than 5 centuries with glory and wine growing panache. Nicolas Gelis bought the property in 1998. On two distinct terroirs, he has 45 hectares of vines here, the lion's share of which are Négrette, a local variety rarely seen elsewhere. Sustainable viticulture is practised - only organic plant composts are used for soil enrichments and trace elements to help stimulate the plants’ own natural defence system. Cover crops are also used between rows to compete with the vines, lower yields, limit soil erosion and help stimulate organic life in the soil. He has updated the estate with some modern practices. He obtained several times “coup de coeur” from the Guide Hachette and two or three stars ranking.

DOMAINE ANDRE ET MIREILLE TISSOT The domain has been managed by Stéphane Tissot since 1990 and he has lead it to the top of the hierarchy in the region since the organic conversion in 1999. Thanks to exceptional terroirs like Les Bruyères, La Mailloche, En Barberon, the 35 hectares of vineyards are cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar. This quest for aromatic diversity has lead Stéphane to build a range of 28 different cuvées (!) often terroir by terroir, with lots of innovations which take into account the incredible diversity of the vineyards of the Jura.

CHAMPAGNE

CHAMPAGNE ERIC LEGRAND The estate is nestled in the heart of Celles sur Ource in the Côte des Bars with its unique soil and climate in Champagne similar to Chablis : clay limestone combined with a less rainy and slightly warmer climate, enabling an exceptional maturity for their Pinot Noir and Chardonnay. He was then followed by his son in 1930, a visionary back in the day, one of the first Winemaker in Côte des Bars, who taught all his knowledge to Eric , who half a decade later built his own Champagne Estate assisted by its two sons Edouard & Valentin. The vineyard is the source of inspiration of this wine grower Estate : 55 % Pinot Noir, 35% Chardonnay, 10% Pinot Blanc spread on 27 plots, which are vinified separately, in order to take advantage of this large palette of micro-climate and soil. DANIEL JIMÉNEZ-LANDI Daniel Gómez Jiménez-Landi started his solo adventure in 2012 after eight years at the family winery Jiménez-Landi in Méntrida. Far removed from the prevailing Spanish trend, that seeks wines with strong extraction and ripening, he has tried to make delicate wines, fresh and fluid. Today he works a total of 7 hectares located between 750 and 1000 meters of altitude and with granite and slate soils depending on the vineyard. His terroir is mainly located in the Tiétar Valley: a valley with a Mediterranean climate but with special humidity features and heavy rain falls. In the vineyards everything is done to recover soil’s life, to balance the vineyard through an organic viticulture, and in some plots, biodynamic. In the cellar, the wine making process is little interventionist, being respectful to the raw material and the identity of each one of the plots. The wine character is shaped by the soil. Gredos is mostly granitic, but there are also some slate soil plots. A bottle from Daniel can be described as a grape infusion to enhance the landscape and its nuances…

In 1982 Francisco Alfonso planted this 7.5 hectare cru on a pure granitic hillside, ten miles from the Atlantic Ocean. For years they sold the wine locally and unlabeled. In 1997 they founded the winery as it is known today: Pedralonga, which means “big rock” in Gallego, a reference to the huge chunks of granite sticking out of the soil. It is now run by Francisco’s son Miguel. This magical vineyard has been cultivated organically since the beginning and biodynamic since 2007. Pedralonga wines are deeply influenced by the atlantic climate and granitic soils perfectly suited for a mineral and balanced expression of the Albariño grapes.

Rias Baixas White 2014 – Pedralonga

DO Rias Baixas

100% Albariño

6 months in tank In the cellar, most of the Albariño grapes are not destemmed and fermentations start with indigenous yeasts only. Miguel is one of the only producers in Galicia to let the malolactic fermentation happen before ageing

the wine on its lees. The resulting wines are complex and age-worthy, with remarkable texture and structure, balanced by bracing acidity and rich minerality. It will go well with sailor-styled mussels, Sushi, shellfish, Torta del Casar (sheep cheese).
