Water Treatment: a need in the beverage industry The main raw material for the preparation of all drinks is water.

Therefore, it is necessary to have high quantities of pure water of suitable quality available.

Water treatment allows water sources to be used for production purposes that would otherwise not be useable because not potable or of not constant quality in time or in different production sites (raw water from well, surface waters, sea water, city water).

Water Treatment : basic processes Basic water treatment consists of four stages: 1) Water Chlorination: chemical disinfection of water through dosing of Sodium hypochlorite. Hypochlorous acid (Available Chlorine) which arises has a high disinfectant activity as it is able to penetrate easily through the cell membrane of the bacterial cell. 2) Prefiltering Process: suspended solids, colloids, iron and manganese are removed by means of suitable filtering beds.

Water Treatment : basic processes 3) Specification finishing Process: adsorption on activated carbon, followed by polishing cartridge filtration, removes, as well as chlorine, organic substances that may alter odour and / or flavour. Depending on the characteristics of the water to be treated, it may be necessary a Reverse Osmosis desalinization, with which salts are removed through semipermeable membranes.

Water Treatment : basic processes 4) Final disinfection process: ultraviolet disinfection (UV) is used for the inactivation of pathogens and viruses transmitted by water. It also ensures and improves the organoleptic qualities of water, since bacteria produce compounds which give an unpleasant odour and flavour.

Water Treatment: special processes Special water treatment according to the customer’s needs:  Water deaeration: for “sensitive” products like non-alcoholic beer it’s advisable to low the residual oxygen, in order to prevent fermentation processes and/or product oxidation.  Ultrafiltration as pre filtering system: Used in Beverage & Food on surface waters  Ozone treatment as final disinfection process: Ozone treatment is also suitable for disinfection from microorganisms, because of its great reactivity and the total absence of chemical residues deriving from its use.
