The purpose of the Annual Meeting is to elect directors to the Valley Senior Services board and review the Annual Report and services delivered in 2015. Your participation is encouraged. Merrill and Loy play a variety of music, specializing in modern and traditional western music as well as country gospel. Merrill plays guitar and harmonica. Loy plays fiddle and mandolin. They both sing. Merrill is the host of the statewide radio variety show, “Dakota Air” heard on the Prairie Public radio network. Loy owns his own insurance company in Fargo. Most recently they have appeared in the popular Johnny Cash and Bob Dylan tribute shows at the Fargo Theatre. Merrill can also be seen regularly on the Hour of Worship telecast (ABC television network), which emanates from his home churchMessiah Lutheran in Fargo. We are excited to have them play at our 90+ birthday party on April 19th!

April Showers Bring Whole Grain Flours Janet Brown, Registered Dietitian

Key words to look for on a package:

It’s not exactly how the saying goes but it helps segue into a hot topic – Whole Grains. They were briefly discussed in January’s article but warrant further, more specific attention. In an era where many fear carbohydrates, it is difficult to promote them. Many feel that pasta, rice and bread promote weight gain and are the only foods that raise blood sugar. Carbohydrates alone do not cause weight gain nor do they give you diabetes – overeating and underexercising cause weight gain. Carbohydrates are a necessary nutrient, full of essential vitamins and minerals. Milk, yogurt and fruit receive all the praises and grains (like pasta, bread and rice) are thought mostly negative. Grains, especially 100% whole grains, provide amazing nutrients – vitamins B and E, magnesium and Iron as well as protein and particularly fiber. Fiber makes us feel fuller longer and blood sugars rise slower. This allows the body to actually use food as fuel rather than store it as fat. Research suggests refined, processed grains are replaced with 100% whole grains, belly fat lowers and risk of diabetes is reduced. The current recommendation is to make half your grains whole.

Easy ways to incorporate Whole Grains in your day: ·

Breakfast: 100% whole grain cereal (ie: Cheerios and Total), whole grain toast, English muffin or bagel, oatmeal, whole grain waffles or pancakes

·

Lunch: Make a sandwich on whole grain bread or a bun or a wrap in a whole grain tortilla

·

Dinner: Accompany your meat and vegetables with whole grain rice or pasta, quinoa or add a whole grain dinner roll

If you are currently consuming refined, processed grains, consider switching at least half of those products to whole grain. Start with one product at a time and place your favorite whole grain on 1/4 of your plate. Try the following recipe to accompany your fish chicken or pork. (Continued on page 5)

Toasted Pecan and Brown Rice Pilaf 2 cups brown rice, cooked

Instructions

1/2 cup pecans, coarsely chopped

Toast pecans in a dry skillet over medium heat for 3 – 5 minutes, until fragrant.

3 tablespoons chopped fresh dill 1 tablespoon chopped fresh parsley 2 tablespoons unsalted butter, cut into small pieces 1/2 teaspoon kosher salt 1/4 teaspoon fresh ground pepper

Add toasted pecans, herbs, butter, salt and pepper into the rice, stirring to combine. Serve. Nutrition facts per serving: Calories: 260 , Total Fat: 16 g, (Saturated Fat: 4.5 g), Sodium: 240 mg, Carbohydrate: 25 g, Fiber: 3 g, Protein: 4 g. makes: 4 servings. serving size: 1/4 cup
