Enjoy these recipes courtesy of © The Vegetarian Society. Try out out Festive Dish in time for Christmas... Festive Filo Pillow with Christmas Sauce Serves 2 Preparation time 20 minutes Cooking time 30-35 minutes Can be vegan* Ingredients 2 tbsp olive oil 1 onion, sliced 150g mushrooms, sliced 1 yellow pepper, chopped 2 cloves garlic, crushed 50ml vegetarian port or red wine 25g mixture of pumpkin and sunflower seeds, toasted 50g walnuts, broken A handful of fresh parsley, rosemary and thyme, chopped Salt and cracked black pepper, to taste 1 packet filo pastry (you will need to use 2 sheets for this recipe) 50g butter or vegan margarine*, melted 200g vegetarian Wensleydale cheese with cranberries or 180g soya cheese with 20g cranberries*

Method 1.Preheat oven to 180C/Gas 4. 2.Gently fry the onion until it softens, then add the mushrooms and pepper. Continue to fry for another 5 minutes. Finish with the garlic and cook for 30 seconds. 3.Add the port and cook until evaporated. 4.Mix in the seeds, walnuts and herbs, then season to taste. 5.Transfer to a bowl, cover with kitchen roll and allow to cool down. 6.Fold out one filo pastry sheet onto a work surface and keep the rest under a damp tea towel to avoid drying out. Brush with butter and layer with another sheet. 7.Put the cool filling onto the pastry, so it covers the middle third of the pastry, leaving a 6cm gap at the top and bottom. Crumble the cheese over the filling. 8.Fold the top over the filling, followed by the bottom and sides. This should leave you with a nicely packed parcel shape. (Don’t over fill if you have too much filling.) 9.Bake in oven for 30-35 minutes, until cooked.

Christmas Sauce This delicious sauce can be made ahead of time or even frozen to be used as you wish. Serves 2 Preparation time 5 minutes Cooking time 45 minutes Vegan Ingredients 2 red peppers, left whole 1 red onion, cut into quarters, unpeeled 3 cloves garlic, unpeeled 2 large tomatoes 1 tbsp olive oil Salt and pepper, to taste 150ml vegetable stock 1 tsp balsamic vinegar ½ tsp dried sage, chopped 3 tbsp vegetarian wine or 2 tbsp vegetarian port

Method 1. Preheat the oven to 180C/Gas 4. 2. Place the peppers, onions, garlic and tomatoes on a baking tray, then add the olive oil. Season with salt and pepper and roast in the oven for 2030 minutes. 3. Remove the skin and seeds from the peppers and discard the garlic and onion skin, then blend thoroughly in a food processor. Add the stock, vinegar, sage and wine or port and blend again. 4. Transfer to a pan and simmer for 10 minutes. Season to taste.

Next Stop Beeston and Chilwell

If you have visited Beeston town centre recently you can’t help but notice some changes which are starting to take place. The changes are part of a multi-million project to extend the tram to Beeston and Chilwell. If you would like to find out more, evening drop-in information sessions are planned to take place in December to keep you update, but below is some brief information about the progress of the project so far. Site clearance and demolition work along the tram route are almost complete and the vast majority of works currently taking place involve moving the different types of utility services away from the tram route. Once utility services have been moved, the main tram infrastructure works, such as laying the tram tracks and installing tram stops and other equipment can start. You may also have seen works associated with the tram are taking place to widen the junction of Queens Road and Meadow Lane, and once complete, works will take place at the Queens Road/Station Road junction. This will improve road capacity along the A6005 and provide an alternative route to Chilwell Road which will be subject to the tram works throughout 2013. Overall the construction of the tram extensions, which will also go to Clifton, is expected to take approximately three years to complete. Evening drop-in information sessions are to be held in Chilwell, at Eskdale Junior School on Tuesday 4th December, and in Beeston, at the Town Hall on Thursday 13th December. Pollyanna Pickering’s Christmas exhibition in her private gallery at Brookvale House Oaker, Matlock, Derbyshire, (AA Signposted) from 19th Nov to 2nd Dec will round off a very busy and exciting year.

In October Pollyanna travelled to Canada to receive the most prestigious International award in the field of Wildlife Art – The Artists for Conservation's Simon Combes Conservation award – at a glittering gala dinner.  AFC President and Founder, Jeff Whiting explains: "We are very proud to honour Pollyanna for her long-term dedication and contributions to conservation causes around the world. Pollyanna has shown extraordinary leadership in giving back to the subjects she depicts so passionately in her paintings." The beautiful bronze trophy will be on display throughout the exhibition alongside fifty new paintings of British Wildlife, in a special ‘Golden’ exhibition to celebrate the fiftieth event she has held in her own gallery.  There will also be the opportunity to see the award winning painting ‘On the Tiles’ depicting a black cat, which scooped first prize in the Association of Animal Artists 2012 Awards. Pollyanna will be on hand throughout the event to chat to visitors, and will be happy to sign copies of her books and fine art prints, including her latest book ‘Wildness’, which has been published in collaboration with the Born Free Foundation. Two new limited edition prints will be launched at the gallery, and also on display will be Pollyanna's wide range of cards and giftware, including a selection of her exclusive deigns for Harrods.  There will be new calendars for 2013, and over 250 Christmas Card designs to choose from, including many commissioned by Charities including Guide Dogs for the Blind, The Born Free Foundation and the NSPCC.  Ten percent of all sales will raise funds for conservation projects.

breezegardening Tools of the trade. Whilst we start to enter the relatively quiet time of gardening it may be time to take a look at your hard worn garden tools and see if there is anything you may want to put on your Christmas list!

he range of garden tools is bewildering and every year new ones are introduced promising great things to all mankind! What, though, really matters when we come to choose the basic but essential instruments of our hobby? After all, if we don’t use our bare hands to dig etc then we must surely notice a difference between a better tool as different from a so one? Quite apart from how long your investment in a given instrument will last (think about the old one of the ‘false economy’ when buying too cheaply) there is, for many of us, a feeling of satisfaction in using something which clearly bears the marks of care in it’s design and manufacture - all helping to make the physical aspects of the hobby a little easier and more enjoyable somehow. Some tips on what to look out for: Try to buy tools made from forged metal due to it being tempered to align the particles, giving it tensile strength. Tools pressed from sheet metal are weak and lends themselves to corrosion. Good quality handles made from ash or fibre-reinforced resin will be

much stronger. Always try them for comfort, fit and ease of handling before buying. Many tools for use in the standing position have handles that tend to be too short which can cause back ache, e.g spades and forks. For small hand tools select ones which have bright handles so that they will be easier to spot among foliage or against the darker soil. For wheelbarrows, choose a pneumatic tyre type as solid tyres are difficult to get over the slightest bump - like a cheap bicycle wheel is. Main items used Spades: The spade should be the correct weight and many of the spades sold are much too short for some of us taller gardeners,so consider replacing the handle with a longer one from a hardware shop. The blade may be a long narrow one for heavy stoney ground or wider, shorter ones for lighter soil. Look for a forged blade set at a slight angle, not straight in profile nor made of pressed steel, ie. folded out of sheet metal. The choice between carbon and stainless steel is down to frequency of use. If yours spends most of its time in the shed the stainless one will stay smooth and will pass better through the soil. A thin layer of rust will form on the surface of the ordinary steel one when left for any length of time, and will tend to clog up with soil during use. (continues...)

breezegardening Fork Stainless steel does not have an advantage over carbon steel as a little rust on the tines (the individual forks) will not matter here due to the smaller surface area in contact with the soil so by all means get yourself a good quality carbon steel one as it will probably last longer and may be more resistant to bending. As with the spade there are two main sizes - a digging fork and a smaller border fork. The smaller size is sometimes referred to as a 'lady's fork' as it is easier to handle, but is useful for use by gents as well! Hand Trowel/Fork Stainless steel is probably best as the blade stays cleaner and is easier to spot if left lying around. Choose one made from forged metal rather than pressed steel as pressed steel will bend easily and frustrate you as you get the hand pliars out time and time again! Look for a good comfortable handle - some have soft ‘gel’ grips now - and in bright colours! Hoe The blade of both types should always be sharp to cleanly sever the top growth from the roots - a good sharpening stone will suffice for this purpose and can be used at various times during the year to ‘top up’ the edge. Care for your tools How often have you come back to your garden tasks only to find a claggy spade, looking very sorry for itself and demanding immediate cleaning before you can even start? Let’s face it, many of us like to just ‘put things away’ rather than clean down and then put everything away all tidy - it’s another task. This task though is important if you want to keep slicing edges clean on spades and forks smoothly functioning etc. Along with basic cleaning with water so no soil remains you can also remember not to leave them outdoors where the metal will rust and wooden handles will rot. A rub over with an oily rag will preserve the metal. Wooden handles will last longer and be more pleasant to hold if given a rub with boiled linseed oil occasionally (linseed oil is not expensive anyway). If you are thinking of buying a garden tool as a gift for someone (and why not - they may not bother to ‘treat themselves otherwise!) then consider where you buy from so they can swap it if needs be. So, keep on top of your tools so they help you. Happy Gardening!

Having mentioned chilblains in a previous issue, I stress again at this time of year that extremes of heat and cold are a contributing factor. Our bodies are generally good at adapting to varying temperatures but as time goes by, we become a little less efficient at dealing with rapid changes. “Last winter, I saw an even greater number of patients with chilblains and without a doubt, it is far better to get ahead of the game now by making sure that you pay special attention to your feet. Warm socks and comfortable shoes or boots making sure they are not too tight or your circulation could become compromised. Embark on a rich foot cream massage which will not only moisturise hard skin areas but also help to stimulate a good blood supply to heels and toes. This lovely cream massage is best done on going to bed so that you avoid the danger of slipping on hard floors, whilst overnight, the cream can get on with its work while you sleep. It really is worth the effort and you will enjoy the fruits of your labour by paying attention to your hard working and grateful feet. Check your dietary intake now which should include plenty of fruit, oily fish and vegetables. Carousel Singers Christmas Concerts. Catch the Christmas spirit by listening to the Carousel singers perform their seasonal concerts.
