RED WINES 2011 Merlot – “Delicate & varietal” 90/100 James Halliday “Bright crimson-purple hue; full of juicy red berry fruits on the bouquet and a fresh, light to medium-bodied palate…” Light to medium bodied, very smooth and soft. Attractive varietal characters of blackcurrant, dusty cloves, delicate grassy and earthy notes. The wine will continue to soften over the next 5 years (from 2015) as the tannins and acids round out; cellar for 10+ years.

2014 Special Reserve Merlot – “Plush & generous” Silver Medal Mudgee Wine Show 2015 Fermented to dry while on skins, with a twice daily pump over and 14 months in barrel. The warmth of the 2014 vintage allowed the fruit to be perfectly ripe while retaining the acid and tannins required to make an outstanding Bordeaux – style Merlot. The wine is varietal, plush and generous. Lashings of dark fruit (cherries, plums) are complimented by herbaceous notes of dry grass and a hint of mint, and warm, toasty milk chocolatey tones from the oak. The tannins are rounded and structured, giving the wine a smooth, full and long palate. Cellar to 2025.

NEW: 2014 Cabernet Sauvignon Merlot – “Fruity & Friendly” A medium-bodied, fruity and friendly wine with very appealing blackcurrant and red fruit and spice in the nose and mouth. The palate has enough grip to be interesting, but is round, soft and long with lingering fruit. 2009 Cabernet Sauvignon – “Rich, ripe & soft” 89/100 Recommended, Halliday: “The cabernet varietal character is very clear…it will be a long lived,…meritorious wine.” Big, rich, ripe, soft, complex but with well integrated flavours. In nose, this wine is very fruity with blackcurrant, red berries and a cedar edge. In mouth, the fruit is ripe and sweet, the palate is very round with lovely soft tannins and great length. Cellar to 2022.

2012 Special Reserve Cabernet Sauvignon – “Distinctive, structural & varietal” 92/100 James Halliday “A medium-bodied cabernet… there are friendly cassis notes, and the wine will open for business sooner than later. To 2027” 2012 was very cold and wet – the kind of season where grapes are often picked unripe in a rush to beat disease resulting in green, astringent tannins and thin, weak wines. A combination of hard work in the vineyard, and patience and courage from the winemaker however, allowed us to get the grapes fully ripe and the tannins perfect for beautifully elegant, structured wines. The acid / pH balance, astringency and alcohol levels will preserve the fruit for longer than a normal year. Over time the wine will become softer and fuller, gaining flavour. Fruit from Blocks 3 and 9 of the Huntington Estate vineyard were fermented in a wooden cuve; spent 17 days on skins and 21 months in French barriques (30% new). Deep purple in colour, in nose the wine has eucalypt and herbaceous notes, capsicum finishing with elegant blackcurrant fruit with a hint of toasty vanilla from the oak. In mouth, cassis is backed up by eucalypt characters. Elegant and smooth tannins are supported by lively acids. The palate is like velvet, with astringent and smooth components well balanced, and a long and fruity finish. Enjoy with Roast Pork (just make sure the crackling is up to it!) to 2036 and beyond

NEW: 2005 Special Reserve Cabernet Sauvignon – “Museum Release” 91/100 “a lovely bottle-aged Mudgee red… alluring complexity in the bouquet. Semi - mature, with cigar-box and malt. A hint of earth. Complex flavours and fluffy tannins to finish" HUON HOOKE 2010 2005 was a fairly normal vintage – neither especially hot nor cold. This wine is holding up well at 11 years of age, though it needs some air to open up to reach its potential. Still fruit-driven in nose with varietal blackcurrant aromas supported by capsicum, spice and an attractive hint of chocolate. In mouth the wine is full-bodied with powdery tannins and a good mid-palate. The fruit flavours persist, supported by spice and chocolate and the wine has a very long finish. Drinking beautifully now, the wine has another 9 or 10 years in it.

2011 Block 3 Cabernet Sauvignon – “Long, vibrant & potent” 95/100 Outstanding, Halliday: “A distinguished Cabernet Sauvignon… excellent varietal definition courtesy of cassis and black olive fruit allied with a touch of earth, the tannins particularly fine, yet firm, as they should be, the finish long and balanced…To 2036.” A great wine from the venerable vines of Block 3 which consistently produce some of the best Cabernet in NSW. A vibrant, bright, clean wine with intense colour. The nose is complex, enticing and floral, with ripe red and black fruits, mulberry, blackcurrant with a







herbaceous/cedary edge. In mouth, this wine is beautiful, clean and potent, with ripe red and black fruit flavours that persist. It is very rounded and full bodied, with a great mid-palate and tongue numbing tannins.

2011 Shiraz – “Attractive fruit, & great length” 93/100 James Halliday Beautiful blackberry and black plum flavours and bouquet, well-balanced with vanilla from the oak. Good length, soft, grippy tannins and full bodied. Very nice! Cellar for 15 years or more (from 2015).

NEW: 2012 Special Reserve Shiraz - “Elegant, harmonious & complex”

92/100 James Halliday: “Blood sweat and tears must have been piled into this wine given the vintage. It is only just medium-bodied, but there are good red and black fruits in a cradle of quality oak and finegrained tannins. Will quite possibly surprise with its longevity. To 2027" 2012 was cold and wet, with Mudgee one of Australia’s coolest wine regions. Only the best viticulturists on the best sites conquered disease; only the bravest vignerons left the grapes on the vine long enough to ripen. 2012 was a terrible year for some, but one of our best in recent years! In nose, the wine is fruit-driven, with wellbalanced aromas of blackberries, violets and a note of pepper. In mouth the fruit is beautiful and intense – flavours of plum and raspberry remind me of the 2008 Reserve Shiraz (also from a cold year). Soft, fine tannins give good grip, a long, smooth mouthfeel and a velvety finish. A subtle wine of substance drinking beautifully now, will age for a further 15+ years

NEW: 2013 Basket Dried Shiraz – “Intense, bold & beautiful” 95/100 James Halliday: “A very interesting and wholly successful Amarone style; because of the path it has taken, there are none of the confit/dead fruit characters that often stalk wines with this level of alcohol, instead there are savoury/licorice/bitter chocolate elements that all add to the appeal, and without any tannin penalty." 2013 vintage conditions were great for reds and I love all of our ’13s. This is the 3rd release of the Basket Dried Shiraz made using the Amarone technique (hand-pick whole bunches of unripe grapes and leave them to ripen off-vine in baskets) and the best of the bunch so far. The goal was to achieve intensity of flavour and impact without “over-cooking” the wine and the ’13 delivers in spades. Fruit from Block 2b was air-dried for 2 weeks, fermented on skins for 7 days and aged in new oak for 12 months. Intense cool-climate Shiraz characters of black pepper, spice and blackberry are evident alongside floral notes of violet and rose. The wine is powerful in mouth with fantastically structured tannins and a finish that goes on for days, laden with dark fruit and spice. Incredibly fruity - blackberry / bramble – with an appealing aroma of toasty hazelnuts. Smooth, soft and long. A simply beautiful wine now, which will go for another 20 to 30 years (from 2015). As this wine ages, the complexity will develop and tertiary flavours will emerge.





WHITE WINES

NV Méthode Traditionelle Chardonnay Pinot Noir – “Complex, delicate & elegant” This wine is a blend of Pinot Noir and Chardonnay that underwent secondary fermentation in the bottle using the traditional Champagne method, followed by riddling. It was disgorged after 15 months on lees. The wine is complex and delicate with elegant floral and citrus notes in nose, with a yeasty / toasty finish. In mouth the wine has lively acid, and is dry and complex with lemony and toasty characters and a long lingering finish in the premium Champagne style. Cellar to 2025. 2015 Semillon – “Delicate & fresh” Whatever the weather, it’s always the season for Semillon. A light floral note accompanies the expected varietal characters of lemon, citrus leaf and grassy aromas in nose. In mouth, the wine is soft, delicate, fresh and lemony, with a lingering fruity tingle to finish. 2015 Semillon Chardonnay – “Pineapple & citrus” 2015 was a return to more “normal” conditions – warm but not too hot, dry but not drought, with timely rainfall. Picked at 13 Baume, the Semillon (60%) contributes lemon and other delicate herbaceous characters, while the Chardonnay brings lovely pineapple, passionfruit and peach aromas and flavours. The wine is rounded and soft with a good mid palate and nice structure. Crisp finish. Drink to 2020. A perfect aperitif wine. 2015 Chardonnay – “Crisp & fruity” I like this wine. It’s got flavour and body with a nice crisp but lingering fruit finish. Drier and more elegant than the 2014. Flavours of lemon sherbet and pineapple with a hint of toastiness. 2015 Barrel Fermented Chardonnay – “Elegant, complex & full” This wine has spent 8 months in barrel, sitting on lees, while being gently stirred twice weekly to ensure those buttery, toasty, mouth filling characters developed fully to compliment the tropical fruit. This 2015 Chardonnay is elegant, complex and full in nose. The primary fruit aromas of banana, peach and tropical fruit are supported by toasty French oak, vanilla and butterscotch. In mouth, the wine is medium to full bodied, with a complex combination of flavours as per the aroma profile, plus lovely citrus from the well balanced acid. This wine has a round, long finish. Cellar to 2020. (I think this wine will hit its stride in the summer of 2016). 2015 Pinot Noir Dry Rosé – “Attractive salmon pink” 100% Pinot Noir from Block 12 Picked on the 11th February at 13.1 Baume. Skin contact in a holding tank for extraction of colour from skins before pressing off. Highly varietal, both in colour (pale salmon pink) and in flavour. In nose, the wine has aromas of strawberries, cherries and pear drops with the mineral / earthy edge you would expect from a Pinot. In mouth, first a flush of juicy strawberries and lovely fruit, followed by minerals and tingly acid for a dry and crisp / tight finish. Very clean and refreshing. This wine just suited for spring and summer enjoyment. Drink to 2017. NEW: 2015 Late Harvest Semillon – “Botrytis flavours, round and long” “A delicious little beast delivering some complexity and plenty of smiles (with) the X factor… Will age but why wait? Very good." Q WINE 2015 saw was a return to more “normal” conditions – warm but not too hot, dry but not drought, with timely rainfall. This is Huntington Estate’s first proper “sticky”. We left ten tonnes of Semillon grapes (which would normally yield 7,500L of juice) on the vine to ripen until around 30% were affected by botrytis. In early May we handpicked what had shrunk to 4 tonnes at 24 Baume. Whole bunches were pressed to yield just 1,800L of juice which we cold-fermented. 40% was matured in new French hogsheads for five months prior to bottling. In nose, attractive aromas of dried orange peel,



orange blossom, marmalade, honey, apricot and faint nuances of new oak adding further complexity. In mouth, the wine is flavoursome and mouth-filling with citrus and lemonade notes. The finish is long and crisp. Lovely now, this wine will really hit its stride in around 2019, peak in 2026 and will hold for a further ten years or so. THE FOUR SEASONS RANGE Everyday drinking (at extraordinary value) wines proudly made and bottled at Huntington Estate in Mudgee, NSW. 2011 Four Seasons Dry Red – “Old school Huntington” Cherries, dark chocolate and liquorice flavours, round tannins and soft in mouth. Drink now or cellar up to 2020. 2015 Four Seasons Dry White - “Fresh & floral” An awesome blend of 85% Semillon and 15% ripe Chardonnay. The wine is floral with ripe orange and tropical fruits, finishing with fresh lemon grassy notes from the Semillon. The palate is fresh and smooth with good length and a fruity finish. 2015 Four Seasons Sweet Rosé -“sweet citrus” 2015 was a return to more “normal” conditions – warm but not too hot, dry but not drought, with timely rainfall. A sweet explosion of fairy floss and orange / mandarin flavours. This pretty pink wine is one to enjoy now and over the next couple of years, for those with a sweet tooth! 2013 Four Seasons Sweet White – “Honeyed citrus” Delicate in nose, intense in mouth with a burst of gorgeous honey, delicate floral and sweet orange flavours. Soft and round with a lingering fruity finish. This wine serves dual purposes - as a table wine for those with a sweet tooth, but also a tremendous value dessert wine. Pavlova anyone? Drink now to 2017.







MIXED 15 2 x 2011 Shiraz – “Attractive fruit, & great length” Beautiful blackberry and black plum flavours and bouquet, well-balanced with vanilla from the oak. Good length, soft, grippy tannins and full bodied. Very nice! Cellar for 15 years or more (from 2015). 2 x 2013 Cabernet Sauvignon Merlot – “Jammy dark fruit & structural” Intense jammy blackcurrant and black plum fruit, with sweet vanilla / butterscotch characters from the American oak. Medium to full bodied with good length. Tannins will round out and soften over the next 2 years (from 2015). Cellar for another 5 after that. 2 x 2007 Tim Stevens Signature Growers’ Revenge – Complex & powerful The latest release under my signature label (in a style developed at Abercorn – more modern and extroverted than Huntington wines, but equally age worthy). This wine is a blend of Cabernet (21% from Abercorn) and Shiraz (71% from Rosby) two of Mudgee’s leading small growers who struggled to have realised the true value of their grapes from corporate buyers. These wines are their revenge – a multi trophy winning series that showcases just how good the fruit really is. This 2007 wine is complex and powerful. The nose has appealing blackcurrant and cherry fruit, with chocolate and vanilla supported by a hint of leathery notes and some dried herbs. In mouth, the wine is medium to full bodied, with lots of lively dark fruits and toasty oak. Dry and silky tannins give the wine a long and gentle finish. Cellar to 2020. 1 x 2013 Grenache – “A spicy, floral, fruity bomb” Packed with flavours of juicy red cherries, violets and clove. Medium bodied, well-balanced, soft tannins and good length. Will peak over the next 2 years (from 2015), cellar for 5 years.

2 x 2009 Cabernet Sauvignon Bin 20 Complex, varietal, elegant. 2 x 2010 Shiraz Bin 9 Dark plum, chocolate and vanilla 2 x 2012 Shiraz Bin 30 Soft, fruity and appealing 1 x 2008 Cabernet Sauvignon Bin 29 – “Complex and fruity” Intense Cherry red in colour. Spicy and smoky flavours are well balanced with those proper from Huntington unique cabernet clones: tobacco, chocolate and honey with blackcurrant and green capsicum. Long and persistent mouth feel. The bottle age has given it a very distinctive mineral touch.







WINTER MIXED DOZEN 2 x 2009 Tim Stevens Signature Shiraz – “Fruity, vibrant & fresh” 96/100 Outstanding, Halliday: “Deep purple-crimson colour still in evidence…powerful and full-bodied…with black fruits, chocolate, vanilla oak and ripe tannins all jostling for primacy and none succeeding.” Dark ruby red, with a purple edge. Great intense colour. In nose, loaded with fruit - pomegranate, ripe red and black plums, with a hint of candied fruit which follows through in mouth. The wine is bright, vibrant and fresh and the palate is very rounded.
