The voyage into Mediterranean delights can start in a familiar way, featuring dishes inspired by the villages of southern European countries such as Spain, France, and Italy. Pasta is a staple, but the menu has so much more to offer. Don’t overlook opportunities using seafood, pork, veal, olive oil, artisan bread, eggplant, mushroom, fennel, tomato, artichoke, basil, oregano: the earthy and aromatic ingredients that appeal to each of the five senses.

For the next port of call, invite diners to the Greek islands and present them with new twists on foods they already love—olives, feta, lamb, pita bread, tzatziki, dill, and mint. Let the evolution of Greek yogurt become part of your menu. Try adding this wonderful ingredient to savory dishes. It’s perfect for dips, or serving with olive oil, honey, or sour cherry sauce.

Variety is the spice of this tour, and few places are better examples than Morocco, where spice-infused foods are a staple. Cinnamon, cumin, turmeric, and ginger are used to flavor foods such as couscous or tagine—meals of vegetables or meat named after the special earthenware container in which they are slow-cooked and served.

Middle Eastern influences are a big part of Mediterranean cooking, and some of the most familiar foods come from Lebanon. Many diners have tasted hummus and tahini, but here is a chance to go further. Using foods commonly sold in the medinas and markets of ancient cities, you can build a visually stunning tabbouleh or fattoush salad, served alongside grilled lamb and vegetable kebabs that have been basted in rich olive oil.

Mix with onion, tomatoes, celery, basil, olives, and capers. In a separate container, whisk together mustard, sugar, vinegar, and garlic. Gradually beat in the oil until an emulation forms.
